Main Ingredients- Chives: 50g (you can increase up to double according to your preference)
- Eggs: 4 medium/large eggs OR 3 extra-large/jumbo eggs
- Small can of spicy tuna: 1 can (85-100g)
Cooking Instructions
Step 1
First, prepare fresh chives. About 50g of chives is roughly the size of a 50-won coin when lightly held in your hand. If you consider 3 stalks as one unit, preparing about 18 stalks will make measuring easier. Chives add great flavor, so feel free to use up to double the amount if you like them.
Step 2
Wash the prepared chives thoroughly, pat them dry, and chop them into bite-sized pieces, about 1cm in length. Chives have a distinct fragrance and crisp texture, so it’s best to chop them into roughly 1cm pieces rather than too finely. Chives are excellent for aiding digestion and boosting energy, making them a great accompaniment to meat dishes.
Step 3
Prepare fresh eggs. Use 4 medium or large eggs, or 3 extra-large or jumbo eggs. Adjust the number of eggs according to their size. (Based on medium/large eggs approx. 52-60g, extra-large/jumbo eggs approx. 70g)
Step 4
Seasoning the eggs directly before cooking makes the fried rice or over rice taste much richer. Prepare 2 pinches of salt. A pinch is the amount you can grasp with your fingers, enhancing the eggs’ natural flavor. Pre-seasoning the eggs is one of the secrets to delicious fried rice, so be sure to try it!
Step 5
Prepare one small can of spicy tuna. Small cans currently available range from 85g to 100g, so use whichever you have. In the past, 100g was standard, but nowadays, the portion sizes tend to be smaller, which can be disappointing. However, delicious spicy tuna will still add wonderful flavor to your fried rice.
Step 6
In a large bowl, crack the 4 eggs (or 3) and add the entire small can of spicy tuna, including the oil. Use a spoon or fork to mash the spicy tuna and mix it well with the eggs. Stir thoroughly to ensure the tuna chunks are well broken down.
Step 7
It’s much more convenient to mash the tuna in a separate small bowl before mixing it with the eggs. Trying to mash the tuna chunks within the egg mixture can be a bit cumbersome as the pieces may not break down easily. Mashing the tuna beforehand ensures a smoother mixture with the eggs.
Step 8
Now, let’s prepare to stir-fry. Heat a pan over medium-high heat and add 1 Tbsp of cooking oil. Once the pan is sufficiently hot, pour in the entire egg and tuna mixture. Heating the pan adequately is crucial for cooking the eggs fluffy without them sticking.
Step 9
As you pour the egg mixture into the hot pan, you’ll see the edges starting to cook. If you’re making fried rice, add 2 bowls of cooked rice at this point. Then, sprinkle 2-3 pinches of salt over the rice and adjust the seasoning to your taste. You can add more soy sauce or salt to match your preference.
Step 10
Using a spatula, mix the rice and eggs together evenly as you stir-fry. If you mix immediately after pouring the egg mixture, the pan’s temperature will drop, potentially causing the eggs to stick. Once the eggs begin to set slightly, start mixing them with the rice. Breaking up the rice grains with chopsticks or a spatula will prevent clumping and result in fluffy fried rice.
Step 11
When the eggs are fully cooked and crumbly, and slightly browned on the surface, add the chopped chives. If you are making over rice without adding rice to the pan, add the chives when the eggs are almost done and stir-fry for just 10-20 seconds. If you added rice, stir-fry the rice and eggs together for about 2 minutes before adding the chives.
Step 12
Chives can become mushy and stick to the pan if overcooked, so stir-fry them for only 10-20 seconds after adding. This helps maintain their crisp texture and fresh aroma. The key is to cook them just enough for the chives to wilt slightly.
Step 13
Here’s a tip for those making it as an over rice dish. Place 1 bowl of warm cooked rice in a serving bowl. Top the rice with half of the stir-fried egg and chive mixture. Drizzle with 2/3 Tbsp of soy sauce and 1 Tbsp of sesame oil according to your taste. This creates a delicious egg and chive over rice. The stir-fried egg and chive mixture also makes an excellent side dish on its own.
Step 14
Finally, sprinkle a pinch of sesame seeds for garnish. The nutty aroma and texture of sesame seeds will enhance the dish. You can omit them if you don’t prefer sesame seeds.
Step 15
When eating, mix the rice and the stir-fried ingredients well to adjust the seasoning. If it tastes too bland, add a little more soy sauce. If it’s too salty, add a bit more rice to balance the flavor. Create your perfect meal with your own golden ratio!
