Main Ingredients- 1 stalk green onion
- 10 cherry tomatoes
- 2-3 fresh eggs
- 0.5 Tbsp oyster sauce
- Cooking oil, as needed

Prepare 1 stalk of green onion. Wash it thoroughly and then slice it thinly. Having it finely chopped will help release its full aroma.

Crack 2-3 fresh eggs into a bowl. Remove the chalaza (the white stringy bits) and then gently whisk them with a fork or whisk until well combined. (If you’re not accustomed to eating tomatoes cooked or prefer a softer texture, consider increasing the egg quantity to 3.)

Heat a pan over medium heat and add a generous amount of cooking oil. Gently preheating the oil allows the green onion’s fragrance to develop beautifully.

Add the chopped green onions to the pan and stir-fry them over medium-low heat, allowing the fragrant aroma to infuse the oil, creating ‘green onion oil.’ Be careful not to burn the green onions; cooking them until they are lightly golden is key.
