Step 1
Begin by selecting ripe winter pumpkins. Look for ones with firm skin, a shiny surface, and a good weight. Wash the pumpkins thoroughly, remove the seeds and fibrous insides, then slice them into thick strips, about 1.5 to 2 cm thick. Slicing them too thinly might cause them to break apart easily during drying.
Step 2
Arrange the pumpkin slices in a single layer on a drying rack or a colander, ensuring they do not overlap. This allows for proper air circulation, preventing mold and ensuring even drying. If you have a sunny and well-ventilated outdoor space like a balcony or yard, drying them there is ideal. Direct sunlight will enhance the sweetness of the pumpkin, resulting in a more delicious hobakgoji.
Step 3
Depending on the weather conditions and humidity, the pumpkin strips typically take 4 to 5 days to dry completely. They are ready when the surface feels slightly chewy and the inside is firm and dry. Avoid over-drying, which can make them too hard. Aim for a slightly moist texture. Once dried, store the hobakgoji in an airtight container in a cool, dry place to enjoy throughout the winter.
