Main Ingredients- Cabbage 150g
- Green onion 15g
- Anchovy broth 4 cups (or 900ml water)
- Cocktail shrimp 10g (or small shrimp)
- Red chili pepper 1/4
- Eggs 2
Cooking Instructions
Step 1
First, prepare the ingredients. Slice the cabbage into thick strips, about 1cm wide. (If you have chives on hand, adding a little will enhance the aroma and color.) Thinly slice the red chili pepper diagonally or into fine julienne strips. Slice the green onion into rounds. Prepare small shrimp or cocktail shrimp. In a bowl, beat the eggs well to create an egg mixture.
Step 2
Wash the prepared cabbage thoroughly and drain off any excess water. It’s now ready for cooking.
Step 3
In a pot, combine 1 packet of anchovy-kelp broth with 900ml of fresh water and bring it to a boil. Once boiling, reduce the heat to medium-low and simmer until the liquid reduces to about 800ml, allowing the broth to develop a deeper flavor. Remove the solids from the broth, leaving only the clear liquid.
Step 4
Add the prepared cocktail shrimp and the thickly sliced cabbage to the clear broth. Bring it back to a boil and cook until both the shrimp and cabbage are tender.
Step 5
Once the cabbage is tender, add the sliced green onion and red chili pepper. (If you’re adding chives, this is the time to do it! Chives will also add a lovely color to the soup.) Season the broth with 2/3 tsp of salt. Taste and adjust seasoning if needed by adding a little more salt.
Step 6
Finally, sprinkle a pinch of ground black pepper for added aroma.
Step 7
Reduce the heat to low. Slowly drizzle the beaten egg mixture into the pot, going around the edges. Importantly, do not stir immediately after adding the egg. Let it cook undisturbed so the egg forms delicate curds.
Step 8
The egg will cook gently, forming soft, fluffy ribbons that naturally blend with the soup. Once the egg is set, turn off the heat.
Step 9
