Porridge Ingredients- 9 abalones
- 2 cups soaked glutinous rice
- 1/4 onion
- 2 Tbsp sesame oil
- 1 Tbsp soy sauce for soup (guk-ganjang)
- 6 times the amount of rice in water or anchovy-kelp broth
Marinated Abalone Ingredients- 3 abalones
- 2 cups seasoned soy sauce (mat-ganjang)
- 3 abalones
- 2 cups seasoned soy sauce (mat-ganjang)
Cooking Instructions
Step 1
First, let’s prepare the abalone. This step can be simple or a bit challenging, but follow along with the recipe! Scrub the medium-sized abalones thoroughly with a toothbrush, making sure to clean every nook and cranny. This part requires a bit of effort and time.
Step 2
Now, separate the cleaned abalone from its shell. To avoid bursting the innards, insert a spoon deep into the abalone’s mouth area and pry it open with a ‘pop’!
Step 3
Collect the separated abalone innards. These innards will give the abalone porridge its rich, savory flavor. Keep them aside for later.
Step 4
Make a small cut near the abalone’s mouth. You’ll find a hard ‘tooth’ inside. Gently pull it out, and it should come out smoothly, just like in the photo. (A little bit squeamish, but necessary!)
Step 5
And that’s it for abalone preparation! Once the abalone is prepped, you’re halfway done with the abalone porridge.
Step 6
Slice the prepared abalone into bite-sized pieces. You can chop them even smaller if you prefer, or leave them slightly larger for a chewier texture.
Step 7
Blend the reserved abalone innards in a blender until smooth. You can also finely mince them with a knife, but blending ensures a smoother consistency. I chose to blend them completely for an undetectable texture.
Step 8
Heat sesame oil in a pan over medium heat. Sauté the finely chopped onion until translucent, then add the sliced abalone and stir-fry quickly to seal in its flavor.
Step 9
Once the onions are translucent and the abalone is lightly cooked, add the soaked glutinous rice and the blended abalone innards. Stir-fry together for about a minute or two until everything is well combined.
Step 10
Pour in the water or broth and bring to a simmer over medium heat. Cook until the rice is tender and the porridge has thickened to your desired consistency, about 15-20 minutes. Stir occasionally to prevent sticking to the bottom.
Step 11
When the rice is cooked and the porridge has reached your desired texture, season with soy sauce for soup (guk-ganjang) to taste. You can also use salt. Your delicious abalone porridge is now ready!
