Main Ingredients- 300g Salted Sea Vegetable (Tot) – Rinse thoroughly to remove salt and soak for 8 hours or overnight.
- 4 cups Glutinous Sweet Rice (Wash clean and prepare).
Cooking Instructions
Step 1
Prepare the sea vegetable (Tot). Take 300g of salted Tot and rinse it thoroughly under running water until the water runs clear to remove the salt. Then, soak it in fresh water for at least 8 hours, or preferably overnight. Soaking it the night before allows for immediate use in the morning, making the cooking process much smoother.
Step 2
After soaking, rinse the sea vegetable (Tot) once more thoroughly and drain any excess water. This step helps to reduce any slight bitterness and results in a more tender texture.
Step 3
Wash 4 cups of glutinous sweet rice thoroughly until the water runs clear, preparing it for cooking. You can also add a small amount of mixed grains if desired. When adding water for cooking, use slightly less than you normally would. Aim for the water level to reach about halfway up your hand from the surface of the rice.
Step 4
Add the prepared sea vegetable (Tot) to the pot with the rice and water. Mix them together. Cook the rice using a pressure cooker on the ‘cook’ setting. Using a pressure cooker will help the flavor and aroma of the sea vegetable infuse into the rice, resulting in a chewier and more delicious texture.
Step 5
Your delicious Tot-bap is ready! You can enjoy it directly from the rice cooker, or gently mix and serve it into bowls.
