  • 2-3 dried shiitake mushrooms
  • 2 Tbsp perilla oil
  • 1 Tbsp soup soy sauce
  • 1 pinch salt

Special Seasoning Sauce Ingredients

  • 5 Tbsp soy sauce (approx. 75ml)
  • 1 Tbsp cooking wine (Mirin)
  • 1 Tbsp low-sodium fish sauce (approx. 15ml)
  • 3 Tbsp water (approx. 45ml)
  • 1 Tbsp minced garlic (approx. 10g)
  • 1 Tbsp red pepper flakes (approx. 7g)
  • 1 Tbsp sesame oil (approx. 15ml)
  • A little chopped green onion
  • 1 green chili pepper
  • 1 red chili pepper
  • 1/3 onion

Cooking Instructions

First, rinse the 2-3 dried shiitake mushrooms thoroughly. Place the shiitake mushrooms and about 2 cups (approx. 400ml) of water in a pot and let them soak gently for about 20-30 minutes. Don’t discard the soaking water; it will be used as a fragrant mushroom broth.

Rinse the cooked dried radish greens under running water and squeeze out excess moisture. Chop them finely into bite-sized pieces. Place the prepared radish greens in a bowl, add 1 Tbsp of soup soy sauce, 2 Tbsp of perilla oil, and a pinch of salt. Gently knead and mix until well-seasoned. Ensure the greens are thoroughly seasoned.

Rinse the rice and place it in the rice cooker. Spread the seasoned radish greens evenly over the rice. Pour the reserved shiitake mushroom soaking water over the greens until they are just submerged.
