Curry Ingredients
  • 1/4 Onion, diced into bite-sized pieces
  • 2 Potatoes, peeled and cut into 2~3cm cubes
  • 1 Sweet Potato, peeled and cut into 2~3cm cubes
  • 1/4 Lotus Root, thoroughly washed and sliced 1cm thick
  • 1/2 Carrot, sliced 1.5~2cm thick
  • 2 Ripe Tomatoes, cored and roughly chopped
  • 1.5 Blocks of solid curry roux
  • 600ml Water (approx. 3 cups)
  • Pinch of Salt (for seasoning)
  • Pinch of Whole Peppercorns (freshly ground recommended for aroma)
  • Scallions, chopped (for garnish)

Cooking Instructions

Step 1

First, prepare the solid curry roux. Although it dissolves well in hot water, it can sometimes clump in the crevices of the lotus root. To ensure a smooth curry, dissolve the 1.5 blocks of curry roux in a small bowl with a little hot water beforehand. This helps create a smoother and cleaner curry sauce.

Step 2

Let’s start preparing the root vegetables. Peel the potatoes and sweet potatoes, then cut them into approximately 2-3cm cubes. Cutting them to a manageable size is important to ensure even cooking. Dice the onion into similar-sized pieces.

Step 3

Slice the carrot into 1.5-2cm thick pieces; they hold their shape well when cooked. For the lotus root, it’s prone to trapping dirt, so use a cleaning brush to scrub its surface thoroughly before slicing it about 1cm thick. Core the ripe tomatoes and chop them coarsely, leaving the skin on.

Step 4

Now, let’s sauté the ingredients. Heat 2-3 tablespoons of cooking oil in a deep pot over medium-low heat. Add the diced onion and stir-fry until it becomes translucent. Once the onion is softened, add the carrots, potatoes, sweet potatoes, and lotus root. Sprinkle in a pinch of salt and freshly ground black pepper. Stir with a spatula and sauté for about 5 minutes to develop the flavors of the vegetables. Finally, add the chopped tomatoes and cook for another minute.

Step 5

Once the vegetables are nicely sautéed, pour in the 600ml of water (about 3 cups) and add the pre-dissolved curry roux. Stir everything together well to ensure there are no clumps of curry roux.

Step 6

Reduce the heat to low, cover the pot with a lid, and let it simmer until the potatoes and sweet potatoes are completely tender. It’s crucial to stir occasionally, scraping the bottom of the pot, to prevent the curry from sticking. Simmer for about 15-20 minutes, or until the vegetables are cooked through.
