A Breast Cancer Patient’s Healthy Recipe: Making a Nutritious Anti-Cancer Fruit Salad
I am currently undergoing treatment for breast cancer and frequently enjoy salads as part of my healthy eating regimen. Today, I’m sharing a fruit salad recipe that’s perfect for those ‘cheat days’ when you want something a little more indulgent yet still healthy. Although I haven’t received a complete recovery diagnosis yet, I am diligently studying and making efforts to eat healthily. Wishing everyone good health!
Main Ingredients- 4 peeled tangerines
- 1 ripe tomato
- 1 golden kiwi
- A small amount of carrot
- A small amount of chicory
- A small amount of blueberries
- A small amount of roasted brown rice puffs
- 1/2 apple
Dressing- 1 Tbsp mayonnaise
- 1 tsp stevia (adjust sweetness)
- 1 container (approx. 100g) plain yogurt

Cooking Instructions
Step 1
First, peel the tangerines and separate the segments. If you have large tangerines, you can cut them in half.
Step 2
Wash the apple thoroughly, remove the core, and dice it into approximately 1.5cm cubes.
Step 3
Dice the tomato into similar 1.5cm cubes. Using a tomato that isn’t too mushy will provide a better texture.
Step 4
Peel the golden kiwi and dice it into 1.5cm cubes. A ripe kiwi will add natural sweetness.
Step 5
Thinly julienne the carrot. Cutting them not too thick will result in a pleasant texture. (Optional: Briefly blanching the carrots can make them softer.)
Step 6
Wash the chicory thoroughly, pat it dry, and then tear or cut it into bite-sized pieces.
Step 7
Combine all the prepared fruits and vegetables in a large bowl. Gently rinse the blueberries before adding them.
Step 8
Now, let’s prepare the dressing. Add the plain yogurt to a separate bowl.
Step 9
Add 1 tablespoon of mayonnaise for a creamy richness.
Step 10
Stir in 1 teaspoon of stevia. This is a sugar substitute; feel free to adjust the sweetness to your preference.

Whisk the dressing ingredients together using a whisk or fork until smooth and well combined. Ensure there are no lumps.
Step 12
Pour the prepared dressing evenly over the fruit salad. Be mindful not to add too much.

Gently toss the salad to coat the fruits and vegetables with the dressing. Mix carefully to avoid mashing the fruits.
Step 14
Finally, sprinkle the roasted brown rice puffs over the salad. This adds a delightful crunch and nutty aroma.
