A Wholesome Rice Dish Infused with Ginseng and Plenty of Radish!
I had some ginseng at home and was wondering what to make with it. I decided to create a nutrient-packed rice dish using plenty of radish. The subtle aroma of ginseng and the refreshing taste of radish blend beautifully with the rice, stimulating the appetite. Adding the texture and flavor of ginkgo nuts and jujubes makes this a healthy delicacy that the whole family can enjoy together. Topped with a fragrant seasoning sauce, this freshly cooked rice is simply delightful! It’s also easy to prepare, making it perfect for busy days.
Ingredients- 4 cups rice (using a standard Korean paper cup)
- 2 fresh ginseng roots
- 20 ginkgo nuts
- 20 dried jujubes
- 1/4 medium radish
Seasoning Sauce- 2 Tbsp Guk-ganjang (Korean soy sauce for soup) or regular soy sauce
- 1 Tbsp sugar
- 1/2 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
I wanted to cook fluffy rice infused with the aroma of ginseng and packed with the refreshing sweetness of radish, to share with my family. Let’s add health and happiness with this lovingly prepared bowl of rice!
Step 2
First, gather all the stars of our rice dish. Prepare the clean rice, the radish for its refreshing taste, the fragrant ginseng, the sweet jujubes, and the ginkgo nuts for a nutty texture.
Step 3
Now, let’s prepare the ingredients. Shred the radish thinly using a mandoline or grater. For the ginkgo nuts, you can briefly microwave them to easily remove the shells. Remove the seeds from the dried jujubes and chop them into bite-sized pieces. Wash the ginseng roots thoroughly and slice them thinly or into manageable pieces so they blend well into the rice.
Step 4
Rinse the rice gently 2-3 times under cold water until the water runs clear, then drain well. Instead of using the rice-washing water, we’ll use a dashi made by soaking a piece of dried kelp (dashima) in cold water for about 30 minutes. This kelp broth will add a deeper, more savory flavor to the rice.
Step 5
Now it’s time to cook the rice. Place the rinsed rice and the prepared kelp broth into your rice cooker or pot. Once the water starts boiling, reduce the heat to medium-low and let it simmer until done. During the final steaming stage when most of the water has been absorbed, arrange the shredded radish, ginkgo nuts, jujubes, and ginseng on top of the rice. These ingredients will gently cook and infuse their flavors and aromas into the rice.
Step 6
Once the rice is cooked and steaming, finely chop some fresh chives and sprinkle them over the top as a garnish. The fresh, aromatic chives will further enhance the flavor of the freshly cooked rice.
Step 7
Wow! As soon as you open the lid, the refreshing aroma of chives combined with the subtle scent of ginseng is simply wonderful. The rice itself feels incredibly healthy!
Step 8
Gently mix the rice with a spatula, ensuring the radish, ginkgo nuts, jujubes, and ginseng are evenly distributed amongst the grains. Be careful not to mash the rice. Serve this nutritious and well-mixed rice in bowls.

Drizzle the prepared seasoning sauce over the rice and mix well for an incredibly delicious meal! Eating this nutritious rice feels like nourishing your body. Enjoy a healthy meal with this wholesome radish and ginseng rice cooked with care!
