A simple and nutritious octopus vegetable porridge recipe using the broth from boiling octopus. Perfect for busy mornings or when you need something light and easy to digest. Enjoy a comforting and filling meal.
Ingredients- Boiled octopus, appropriate amount (cut into bite-sized pieces)
- Octopus boiling water, 400ml (for broth)
- Zucchini, 1/4 (diced small)
- Carrot, 1/8 (diced small)
- Shiitake mushroom, 1 (finely minced)
Seasoning- Sesame oil, 1.5 Tbsp
- Korean soup soy sauce, 0.5 Tbsp
- Salt, a pinch (adjust to taste)

Cooking Instructions
Step 1
First, cut the pre-boiled octopus into bite-sized pieces. Strain the octopus boiling water through a sieve to get 400ml of clear broth. This broth will add a deep flavor to your porridge.
Step 2
Dice the zucchini and carrot into small cubes, and finely mince the shiitake mushroom. Add the prepared vegetables and the sliced octopus to a pot.
Step 3
Add the seasoning ingredients: 0.5 Tbsp of Korean soup soy sauce and 1.5 Tbsp of sesame oil to the pot. Stir well to coat the ingredients with the seasoning.
Step 4
Sauté the ingredients over medium heat. Cook until the fragrant aroma of sesame oil is released and the vegetables are lightly cooked.
Step 5
Add one serving of rice (about 1 bowl) to the pot. Gently stir with a spatula to avoid mashing the rice grains, and stir-fry briefly with the other ingredients. This step helps prevent the rice from clumping and ensures it cooks evenly.
Step 6
Pour in the prepared 400ml of octopus boiling water. Make sure there is enough liquid to cover the rice, vegetables, and octopus.
Step 7
Now it’s time to cook the porridge. Start by bringing it to a boil over medium heat. Once boiling, reduce the heat to low. Stir continuously to prevent sticking to the bottom of the pot, and simmer until the rice grains are fully broken down and the porridge has a thick, creamy consistency. Finally, adjust the seasoning with salt to your preference. Your delicious octopus vegetable porridge is ready!
