Salad Ingredients- 1/2 root fresh ginseng
- 1 pack imitation crab sticks (approx. 100-150g)
- 1/4 onion
- 1 handful peas (frozen or canned)
- 1/2 avocado
Salad Dressing- 5 Tbsp mayonnaise

Step 1
Let’s prepare all the ingredients thoroughly to make a delicious ginseng and crab stick salad.

Prepare the peas. Bring a pot of water to a boil, add the peas, and cook for about 4 minutes. Drain the cooked peas and rinse them under cold water to stop the cooking. (If using frozen peas, follow the package instructions.)

Now, let’s prepare the other ingredients. Gently shred the imitation crab sticks into bite-sized pieces (about 2cm long) along the grain. Finely slice the onion, soak it in cold water for a few minutes to remove any harshness, then drain well. Pit, peel, and dice the avocado into pieces similar in size to the crab sticks. Finally, thinly peel the ginseng and slice it into fine strips, similar in thickness to the julienned onion.

To reduce any bitterness from the ginseng and enhance its natural sweetness and nutty aroma, briefly blanch the julienned ginseng in boiling water for about 10-15 seconds. Immediately rinse the blanched ginseng in cold water and drain thoroughly to maintain a crisp texture.

In a large bowl, combine the shredded crab sticks, sliced onion, blanched ginseng, and drained peas. Add 5 tablespoons of rich mayonnaise to the mixture.
