- Tiny pinch of Pepper

Cooking Instructions
Step 1
First, prepare one block of tofu. Firmer tofu has less moisture, making it easier to stir-fry.
Step 2
Wrap the tofu in a cheesecloth or paper towels to squeeze out as much moisture as possible. Then, gently mash the tofu with a fork or your hands until it’s crumbly. It’s okay if there are a few small lumps.
Step 3
Heat a generous amount of olive oil in a non-stick skillet over medium heat. Add the mashed tofu and stir-fry until most of the moisture has evaporated. This step greatly improves the texture of the dumpling filling.
Step 4
Season the stir-fried tofu with a pinch of salt and pepper. Be careful not to over-salt; adjust the seasoning to your preference.
Step 5
Next, prepare two eggs. These will add a nice softness to the dumpling filling.
Step 6
Crack the eggs into a bowl and lightly whisk them, avoiding creating too much foam. Lightly oil another preheated skillet and pour the egg mixture in to make a thin omelet.
Step 7
As the egg begins to set, gently scramble it with chopsticks or a spatula, creating soft scrambled egg pieces. It’s better to have slightly larger pieces rather than very fine crumbs.
Step 8
For the remaining vegetables in the filling, wash the cabbage, zucchini, and carrot, then shred or finely chop them. Heat a skillet with a little olive oil. Add the shredded vegetables, a pinch of salt, and pepper, and stir-fry them until they are tender-crisp. Avoid overcooking to maintain their texture.
Step 9
All the filling ingredients are now ready. Combine the stir-fried tofu, scrambled eggs, and stir-fried vegetables in a bowl and gently mix them together. Your tofu dumpling filling is now prepared!
Step 10
Prepare a bowl of lukewarm water. Dip one rice paper wrapper at a time until it becomes pliable and soft, being careful not to over-soak it as it can tear. Place a portion of the prepared tofu filling onto the softened rice paper.
Step 11
Fold in the edges of the rice paper, then roll it up tightly and neatly, similar to making a spring roll, to form the dumpling shape. Ensure it’s rolled securely to prevent any filling from escaping.
Step 12
Your delicious tofu dumplings are now complete! They look as good as they are healthy and are ready to be enjoyed.
Step 13
For an extra touch, sprinkle some sesame seeds over the finished tofu dumplings. This adds a lovely nutty flavor and appealing appearance.
Step 14
Let’s make the perfect dipping sauce for your tofu dumplings! Combine 1 tablespoon of soy sauce, 1 tablespoon of oligodang (or honey), a tiny pinch of pepper, the juice of 1 lemon, and 2 finely minced Korean green chilies. Mix well to create a sweet, tangy, and slightly spicy sauce.
Step 15
Generously drizzle the prepared sauce over your tofu dumplings and enjoy your healthy and delicious creation! Enjoy your meal! ^^
