Radish greens are a healthy food rich in vitamins, minerals, and fiber, which are often deficient in winter. This stir-fry is packed with essential nutrients and is perfect as a side dish when you have a poor appetite, contributing to your overall health.
Ingredients- 150g Dried radish greens
- 1 Tbsp Cooking oil
- 3 Tbsp Perilla oil (deul-gireum)
- 3 Tbsp Soy sauce for soup (guk-ganjang)
- 1 Tbsp Fish sauce (aekjeot)
- 3 Tbsp Minced garlic
- 1 Tbsp Sesame seeds
Cooking Instructions
Step 1
First, rinse the dried radish greens thoroughly. Place them in a large pot with plenty of water and boil over medium heat for about 1 hour and 30 minutes to 2 hours until tender. After boiling, let them soak in hot water for 3-4 hours for an even softer texture.
Step 2
Once softened, transfer the boiled radish greens to cold water and rinse them 4-5 times until clean. Ensure all dirt and impurities are removed.
Step 3
Gently squeeze out as much water as possible from the rinsed radish greens. Then, cut them into bite-sized pieces, about 3-4 cm long, as overly long strands can be difficult to eat.
Step 4
To the squeezed radish greens, add 3 Tbsp of soy sauce for soup and 1 Tbsp of fish sauce. Gently mix them with your hands, ensuring the seasoning is evenly distributed throughout the greens.
Step 5
Add 2 Tbsp of minced garlic to the mixture and continue to mix. This will help the garlic flavor to permeate the radish greens.
Step 6
Continue to mix everything thoroughly until all ingredients are well combined. Let it sit for a moment for the flavors to meld.
Step 7
Now, it’s time to stir-fry. Heat a lightly oiled pan over low heat. Add 1 Tbsp of minced garlic and stir-fry until fragrant, being careful not to burn it. Cook until a subtle garlic aroma is released.
Step 8
Once the garlic is fragrant, add the seasoned radish greens to the pan and stir-fry together. Stir occasionally to prevent sticking.
Step 9
Add 3 Tbsp of ground perilla seeds (deulkkae garu) to enhance the flavor and mix well with the radish greens. A nutty aroma will start to fill the air.
Step 10
Finally, drizzle in 3 Tbsp of perilla oil (deul-gireum). This will add a richer flavor as it coats the radish greens. Mix well.
Step 11
To finish, sprinkle 1 Tbsp of sesame seeds over the top. The nutty flavor of the sesame seeds will make it even more delicious. Your flavorful stir-fried dried radish greens are ready!
