Healthy and Tasty Side Dish: How to Make Broccoli and Crab Stick Pancakes
I’m someone with a very simple palate and don’t particularly enjoy eating vegetables. Growing up, I mainly ate what I liked, but after getting married and thinking about my husband’s health, I’ve spent a lot of time contemplating and trying ways to incorporate vegetables healthily into our diet. Today, I’m going to show you how to make delicious Broccoli and Crab Stick Pancakes, a wonderful way to enjoy broccoli! This dish is not only nutritious but also incredibly easy to make, perfect as a side dish for meals or even a healthy snack for kids.
Main Ingredients- 1/2 head broccoli
- 4 sticks imitation crab meat
- 3 eggs
- 1/2 red bell pepper
- A little bit of leftover vegetables from the fridge (onion, carrot, etc.)
Seasoning- Pinch of salt
- Pinch of black pepper

Cooking Instructions
Step 1
First, wash the broccoli thoroughly. Blanch it in boiling water for about 1 minute, then rinse under cold water and drain well. Chop the blanched broccoli into bite-sized pieces. Shred or finely chop the imitation crab sticks. Finely dice the red bell pepper and any other vegetables you have on hand (like onion or carrot) into similar small pieces. Adding a variety of vegetables will enhance the flavor and texture.
Step 2
In a mixing bowl, crack the 3 eggs. Add a pinch of salt and a pinch of black pepper. Whisk the eggs thoroughly until well combined and slightly frothy, creating a smooth egg mixture.
Step 3
Add the prepared broccoli, shredded crab sticks, and diced red bell pepper along with any other chopped vegetables to the whisked egg mixture.
Step 4
Using a spoon or spatula, gently mix all the ingredients together until everything is evenly coated with the egg mixture. Your pancake batter is now ready! If the batter seems too thin, you can add a small amount of flour or pancake mix to adjust the consistency.
Step 5
Heat a generous amount of cooking oil in a frying pan over medium heat. Using a spoon, scoop portions of the batter and carefully place them into the hot pan to form small pancakes.
