Main Ingredients- 1 cup cooked clams (meat only)
- 1/4 onion (finely minced)
- 2/3 cup broccoli (cut into small florets)
- 2 Tbsp minced carrot
- 1 Tbsp minced green chili pepper (add more if you like it spicy)
- 1 Tbsp minced garlic
- 1 bowl warm cooked rice
- 3 Tbsp perilla oil (for rich flavor)
Clam Seasoning- 1 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp plum extract (or syrup)
- 1 tsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp plum extract (or syrup)
- 1 tsp oyster sauce
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to your fried rice. Finely mince the carrot, onion, and green chili pepper using a blender or knife. Also, prepare the minced garlic.
Step 2
Cut the fresh broccoli into bite-sized florets. Rinse them thoroughly under running water.
Step 3
In a bowl, combine the cooked clam meat with all the ‘Clam Seasoning’ ingredients (soy sauce, cooking wine, plum extract, oyster sauce). Gently mix and let it marinate for a while to allow the flavors to soak into the clams.
Step 4
Heat a wide pan over medium-low heat and add 2 tablespoons of perilla oil. Once the oil is warm, add the minced garlic and stir-fry until fragrant to create garlic-infused oil.
Step 5
Once the garlic aroma fills the pan, add the minced onion and sauté until translucent, allowing the natural sweetness of the onion to develop.
Step 6
When the onion is cooked, add the minced carrot and minced green chili pepper. Continue to stir-fry for about 1-2 minutes until the vegetables are tender. It’s best to maintain medium heat during this step.
Step 7
Add the prepared broccoli florets and the marinated clams to the pan. Stir-fry together for 1-2 minutes until the broccoli is slightly softened and the clams have turned a appetizing color.
Step 8
Finally, add 1 bowl of warm cooked rice and the remaining 1 tablespoon of perilla oil. Gently stir and break up the rice with a spatula, ensuring all ingredients are well combined and the rice grains are separated. Cook for 2-3 minutes, being careful not to let the rice clump together. Your delicious Broccoli and Clam Fried Rice is ready!
