  • 1 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp sesame oil
  • 1 tsp toasted sesame seeds
  • 1 tsp minced garlic
  • 1 tsp chopped green onion
  • Pinch of salt (adjust to taste)

First, let’s prepare the kelp broth, which is the foundation for delicious rice. Steep a piece of dried kelp (about 5x5cm) in approximately 600ml of water for about 10 minutes to create the broth. Once the water starts to boil, turn off the heat and remove the kelp to get a clear broth.

Rinsing the rice thoroughly before cooking is essential for a great texture. Gently rinse the rice 2-3 times, drain it in a sieve, and let it soak for at least 10 minutes. This allows the rice grains to absorb moisture, resulting in softer and tastier cooked rice.

Now, melt the butter and spread a thin layer evenly over the inside of the rice cooker pot, including the bottom and sides.
