Introducing a quick and nutritious Apple, Broccoli, Carrot, and Egg Salad. It’s a satisfying option for breakfast, offering a perfect balance of flavor and nutrition with the freshness of apples, the crunch of broccoli, the sweetness of carrots, and the creaminess of boiled eggs.
Main Ingredients- 6 hard-boiled eggs
- 1 apple
- 1/2 head of broccoli (blanched)
- 1/3 carrot
Dressing Ingredients- 2 Tbsp mayonnaise
- Pinch of salt
- 1 tsp sugar
- Pinch of black pepper
- 2 Tbsp mayonnaise

Cooking Instructions
Step 1
First, prepare 6 hard-boiled eggs and peel them carefully. These will provide a wonderfully soft texture to your salad.
Step 2
Blanch the broccoli in boiling water for a short time, then rinse it under cold water to stop the cooking and drain well. Chop it into small, bite-sized pieces. Blanching makes the broccoli tender and brightens its color.
Step 3
Wash the apple thoroughly, remove the core, and chop it into bite-sized pieces, leaving the skin on. Apples are rich in nutrients in their skin, so it’s recommended to wash them well and use the peel. This adds a refreshing crispness and flavor.

Peel the carrot and dice it finely. (Tip: For an even softer texture, you can lightly blanch the diced carrot along with the broccoli. I’ve opted to use it raw this time.)

Combine all the prepared ingredients in a bowl. Add the chopped broccoli, apple, and diced carrot together.

Place the hard-boiled eggs into a zip-top bag. Seal the bag, leaving a little air, then gently mash the eggs with your hands. The mashed egg yolks will act as a natural binder, allowing you to use less mayonnaise while still achieving a creamy consistency.
Step 7
Carefully snip off a small corner of the bottom of the zip-top bag. Squeeze the mashed eggs evenly over the other ingredients. This method ensures the dressing is spread smoothly.
Step 8
Now, add the dressing ingredients. Mix in 2 tablespoons of mayonnaise, a pinch of salt, 1 teaspoon of sugar, and a pinch of black pepper. Gently toss everything together until well combined.
Step 9
Taste the salad and adjust the seasoning as needed, adding more mayonnaise, salt, sugar, or pepper according to your preference. The mashed egg yolks naturally create a creamy sauce, so even with less mayonnaise, the salad will be delicious.

This salad is wonderful eaten on its own with a spoon, spread on toast for a sandwich, or served with crackers for a delightful snack or light meal.
