Essential Ingredients- 1 block (approx. 300g) Tofu
- 1 fresh Egg
- 1 stalk Green Onion
- 1 Cheongyang chili pepper (optional, for a spicy kick)
- 1/2 Tbsp Oyster Sauce
- Pinch of Black Pepper (to taste)
Cooking Instructions
Step 1
First, prepare the green onion and Cheongyang chili pepper to add flavor to your fried rice. Finely chop the green onion. If using the chili pepper, remove the seeds and mince it finely. Adding the chili pepper is highly recommended if you enjoy a spicy taste!
Step 2
Gently drain the excess water from the tofu. Then, using the side of a knife or a fork, mash the tofu until it’s crumbly. Avoid leaving large chunks; aim for a relatively fine texture.
Step 3
Now, it’s time to dry out the tofu. Heat a non-stick pan over medium-low heat without adding any oil. Add the mashed tofu and stir-fry slowly. Continue cooking until the tofu loses its white color, becomes slightly golden, and most of the moisture has evaporated.
Step 4
Once the tofu is mostly dry, add a tiny drizzle of cooking oil to the pan. Add the chopped green onions and stir-fry until fragrant, creating a green onion oil. Once the aroma is released, add the mashed tofu back into the pan and mix quickly. Now is also the time to add the minced Cheongyang chili pepper, if using, and stir everything together.
Step 5
Next, add the egg for an extra protein boost. Push the tofu mixture to one side of the pan to create space, then crack the egg into the empty space. Before the egg cooks completely, quickly mix it into the tofu mixture and stir-fry together. The key is to scramble and mix it well for a fluffy texture.
Step 6
Add the oyster sauce to enhance the flavor of the fried rice. Stir-fry for another moment, ensuring the oyster sauce is evenly distributed throughout the tofu, egg, and vegetables.
Step 7
