Easy Homemade Black Bean Noodles (Seoritae Kongguksu) Recipe for a Refreshing Summer Dish

This is one of my absolute favorite dishes! The rich, velvety texture of homemade black bean broth is always a welcome treat. While many restaurants offer Kongguksu as a seasonal summer delicacy, having it readily available at home is incredibly satisfying. Once you blend a generous batch of the bean broth, you can simply cook some somen noodles and enjoy this delightful meal whenever the craving strikes. Let’s begin making this healthy and flavorful black bean dish!
Kongguksu Recipe Ingredients- 150g Black Beans (Seoritae variety)
- 1 serving Somen noodles (approx. 1 handful)
- 1 Tbsp Walnuts
- 1 Tbsp Pine Nuts
- 2 Tbsp Peanut Butter (or Peanut Paste)
- 1 sheet Dried Kelp (approx. 5x5cm)
- 200ml Milk (or Soy Milk)
Cooking Instructions
Step 1
First, thoroughly wash the black beans (Seoritae). Discard any damaged or imperfect beans, keeping only the clean ones. Soak the prepared beans in plenty of water. Soaking them overnight beforehand will make the cooking process much easier the next day.
Step 2
While the beans are soaking, add one sheet of dried kelp. The kelp is excellent for enhancing the umami flavor of the bean broth, contributing to a deeper and more delicious taste.
Step 3
Now, it’s time to boil the soaked beans. Place the beans and ample water in a pot and bring to a boil over high heat. Once the water starts boiling vigorously, simmer for about 3 minutes. Then, turn off the heat and cover the pot. Allow the residual heat to finish cooking the beans. This method ensures the beans become tender and easy to blend.
Step 4
The skin of black beans is packed with nutrients, so we’ll blend them whole, including the skin. You can adjust the texture of the blended beans according to your preference and your blender’s capabilities. I prefer a slightly textured result for a more satisfying chew. If you prefer a smoother consistency, blend for longer.

To add another layer of creaminess and flavor, add 1 tablespoon of pine nuts. Pine nuts contribute a wonderful aroma and smoothness to the bean broth.

Next, add 1 tablespoon of walnuts. Walnuts pair exceptionally well with the nutty flavor of the beans, enriching the overall taste of the Kongguksu broth.

In addition, add 2 tablespoons of peanut butter (or peanut paste). Peanut butter adds a deep, nutty richness and helps create the wonderfully smooth texture of the bean broth.

Now, combine the cooked beans, pine nuts, walnuts, and peanut butter in your blender. Add 200ml of milk (or soy milk) and blend all the ingredients together. As you blend, adjust the consistency of the bean broth to your liking. If it’s too thick, gradually add more water until you reach your desired thickness. Since you’ll be adding ice, it’s perfectly fine to make the broth a bit thicker initially.
Step 9
Let’s get the somen noodles ready to accompany the delicious Kongguksu! Bring a generous pot of water to a rolling boil. Add a handful of somen noodles and cook them until they are al dente. If the water threatens to boil over, add a little cold water to control the temperature. Once the noodles are cooked, quickly rinse them under cold running water to remove excess starch. Drain them thoroughly in a colander.

Arrange the perfectly cooked, springy somen noodles attractively in a serving bowl.

Pour the rich and creamy black bean broth generously over the noodles.
