Bring a pot of water to a rolling boil with 1 tsp of coarse salt. Once boiling, add the prepared gochut leaves and blanch for a very short time, about 30 seconds to 1 minute. Be careful not to over-blanch, as they can become mushy. Immediately rinse the blanched leaves in cold water to cool them down and drain them thoroughly by squeezing out the excess water. (Tip: Rinsing in cold water helps maintain a vibrant green color and a crisp texture!)
