Making a Wholesome Abalone Rice for the Hot Summer Days
A recipe for nutrient-packed abalone rice, perfect as a nourishing meal during the peak of summer. This dish is a revitalizing addition to your summer table.
Main Ingredients- 5 fresh abalones
- 2 cups glutinous rice
- 2 cups regular rice
- 1/5 carrot
- 4 dried shiitake mushrooms (or 4 fresh shiitake mushrooms)
- 2 king oyster mushrooms
- 1 root of ginseng (Panax ginseng)
- 4 pitted red dates
- 50g ginkgo nuts
- 800-900ml herbal broth
Seasoning for Flavor- 2 Tbsp sesame oil
- 2 Tbsp cooking wine (mirin or similar)
- 1 Tbsp butter

Cooking Instructions
Step 1
First, clean the abalones thoroughly with a brush. Separate the meat from the shell, remove the hard ‘teeth’ from the abalone meat, and then slice the meat into bite-sized pieces. Keep the abalone innards aside. Finely mince the carrot and king oyster mushrooms. Thinly julienne the shiitake mushrooms and ginseng root. Wash the glutinous rice and regular rice, then soak them in water for about 30 minutes. Pit and finely chop the red dates. Prepare the warm herbal broth.
Step 2
Drizzle 2 tablespoons of sesame oil into the bottom of a pressure cooker and add the reserved abalone innards. Sauté over medium heat for about 2 minutes until fragrant. This will infuse the oil with a deep flavor.
Step 3
Add the soaked glutinous rice and regular rice to the pot. Stir-fry for about 1-2 minutes until the rice grains become slightly translucent. Stir-frying the rice helps create a fluffier texture. Mix in 2 tablespoons of cooking wine to remove any potential fishiness and ensure a smooth flavor.
Step 4
Add the minced carrot and king oyster mushrooms, and mix well with the rice. This will add color, texture, and sweetness to the dish.
Step 5
Add 1 tablespoon of butter to enrich the rice with a creamy, nutty flavor. The butter will melt and coat the rice grains, adding a luxurious touch.

Add the sliced abalone meat and gently mix it with the rice and vegetables. The abalone will cook through and provide a wonderful chewy texture.

Pour in the prepared warm herbal broth (800-900ml). Adjust the amount of liquid based on the type of rice and how long it was soaked.
Step 8
Arrange the julienned ginseng, shiitake mushrooms, pitted red dates, and ginkgo nuts attractively on top. Close the lid of the pressure cooker. Cook on high heat until the pressure cooker starts to whistle or the weight valve lifts. Immediately reduce the heat to medium-low and continue to cook for another 3-5 minutes. Turn off the heat and let it steam.
