Porridge Ingredients

  • 5 abalone livers
  • 2/3 cup sweet glutinous rice
  • 2/3 cup regular short-grain rice

First, thoroughly clean and prepare the 5 fresh abalones. From these, separate 3 abalones from their shells. Score them lightly with a knife to create a visually appealing topping for the porridge. The remaining 2 abalones should be thinly sliced to be cooked directly into the porridge for enhanced flavor.

It’s best to use the abalone livers while they are fresh to achieve the richest flavor without any gamey taste. Remove any tough parts from the end of the livers and chop them with scissors. Lightly coat a pan with sesame oil, add the abalone livers, and gently sauté over low heat for 1-2 minutes. This process enhances their flavor and makes them more fragrant.

Add the sweet glutinous rice and regular rice, which have been washed and soaked for at least 30 minutes, to the pan with the sautéed abalone livers. Stir and cook together for 1-2 minutes, allowing the rice grains to be coated in the oil. This sautéing step prevents the rice from clumping and results in a much smoother porridge.

Pour enough water into the pot where the rice was sautéed. (Approximately 5-6 times the volume of rice is suitable.) Bring to a boil over high heat, then reduce to medium-low heat. Stir frequently with a spatula to prevent the rice from sticking to the bottom of the pot, and continue to cook until the rice grains are tender and have broken down. This should take about 20-25 minutes.

Once the rice grains begin to soften and break down, add the sliced abalone pieces and cook them into the porridge. Also, add the scored abalone intended for topping at this stage to let it cook. (Tip: For an even richer flavor, you can lightly pan-fry the topping abalone in perilla oil or sesame oil before adding it.)
