Oysters are in season from September to December, so they’re not just a winter delicacy but can be enjoyed from autumn onwards. After enjoying some fresh oysters with a spicy dipping sauce, we’ll use the remaining ones to create this comforting and flavorful soup. This recipe assumes you have pre-cleaned oysters, so detailed oyster preparation instructions are omitted. The soup combines the refreshing taste of oysters with the savory depth of miso and the freshness of spinach, creating a dish that will surely please the whole family.

  • 150g prepared oysters
  • 700ml anchovy-kelp broth (about 3.5 cups)

  • 1 Tbsp miso paste
  • 1/2 Tbsp minced garlic

Cooking Instructions

First, trim any yellow or wilted leaves from the fresh spinach. Rinse it thoroughly under running water multiple times to remove any dirt or debris. Soaking it in water for a short while can help loosen any stubborn soil.

After washing the spinach clean, gently shake off excess water. Chop it into bite-sized pieces. It’s best to chop the leaves and stems together.

In a pot, add the anchovy-kelp broth and whisk in 1 Tbsp of miso paste until fully dissolved. Bring the mixture to a rolling boil over high heat, ensuring the miso is smoothly incorporated.
