Spinach Miso Soup with Oysters, the ‘Milk of the Sea’ – Boost Your Immunity!
Introducing a delightful Spinach Miso Soup, enriched with oysters, known as the ‘milk of the sea’! Oysters are in season from September to December, so they’re not just a winter delicacy but can be enjoyed from autumn onwards. After enjoying some fresh oysters with a spicy dipping sauce, we’ll use the remaining ones to create this comforting and flavorful soup. This recipe assumes you have pre-cleaned oysters, so detailed oyster preparation instructions are omitted. The soup combines the refreshing taste of oysters with the savory depth of miso and the freshness of spinach, creating a dish that will surely please the whole family.
Main Ingredients- 1 large bunch of fresh spinach (approx. 150-200g)
- 150g prepared oysters
- 700ml anchovy-kelp broth (about 3.5 cups)
Seasoning Ingredients- 1 Tbsp miso paste
- 1/2 Tbsp minced garlic
- 1 Tbsp miso paste
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, trim any yellow or wilted leaves from the fresh spinach. Rinse it thoroughly under running water multiple times to remove any dirt or debris. Soaking it in water for a short while can help loosen any stubborn soil.
Step 2
After washing the spinach clean, gently shake off excess water. Chop it into bite-sized pieces. It’s best to chop the leaves and stems together.
Step 3
In a pot, add the anchovy-kelp broth and whisk in 1 Tbsp of miso paste until fully dissolved. Bring the mixture to a rolling boil over high heat, ensuring the miso is smoothly incorporated.
Step 4
Once the broth is boiling, add the prepared spinach and let it simmer for a short while. Cook just until the spinach wilts, being careful not to overcook it until it becomes mushy.
Step 5
When the spinach is partially cooked, add the prepared oysters and simmer for just a little longer. Oysters can become tough and lose their flavor if cooked for too long, so it’s crucial to cook them briefly. Simmer only until the oysters turn opaque.
Step 6
Finally, stir in 1/2 Tbsp of minced garlic and simmer for another moment to allow the flavors to meld. Your delicious Spinach Miso Soup is now ready! You can also add a pinch of black pepper to taste.
