When I have leftover ingredients, I often make fried rice or bibimbap. Today, I found some frozen mussels intended for braising and decided to change my plan to make mussel and vegetable rice instead, aiming to clear out various bits and pieces from my fridge. This dish is a fantastic way to use up small amounts of ingredients and create a delicious meal.

  • 1/4 yellow bell pepper
  • 1/3 red bell pepper
  • 1/4 small kabocha squash
  • 2 cups water (same amount as rice)

Seasoning Sauce

  • 3 Tbsp soy sauce
  • 1 Tbsp fish sauce
  • 3 Tbsp minced green onion
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Cheongyang chili pepper (finely chopped)
  • 1 red chili pepper (finely chopped)
  • 0.5 Tbsp minced garlic
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil
  • (Optional: additional herbs or spices)

To make delicious rice, rinse the rice thoroughly and soak it in cold water for 30 minutes before cooking. Soaking the rice beforehand helps it cook evenly, resulting in a softer and more flavorful texture.

Now, let’s prepare the vegetables for the rice. Cut the king oyster mushroom into bite-sized pieces for a pleasant chew. Remove the seeds from the yellow and red bell peppers and chop them into similar sizes. Peel the kabocha squash, remove the seeds, and cut it into pieces roughly the same size as the other vegetables.

Here are the mussel meat, the star of today’s dish, and the vegetables I’ve prepared to go with it. Feel free to add any vegetables you like! You can substitute or add ingredients like zucchini, carrots, or onions to create your own unique mussel and vegetable rice. Using a variety of colorful vegetables will make the dish visually appealing as well.

Arrange the prepared vegetables, such as king oyster mushrooms, bell peppers, and kabocha squash, on top of the rice. Finally, layer the mussel meat on top. Layering the ingredients this way allows their flavors and aromas to meld beautifully as the rice cooks.

Add 2 cups of water to the pot, the same amount as the rice. You might want to slightly adjust the water level depending on the type of rice or how long it was soaked.

In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp fish sauce for umami, 3 Tbsp minced green onion for aroma, and 1 Tbsp red pepper flakes for a touch of heat. Finely chop 1 Cheongyang chili pepper for spiciness and 1 red chili pepper for color, and add them to the bowl.

Next, add 0.5 Tbsp minced garlic for flavor, 1 Tbsp toasted sesame seeds for nuttiness, and 1 Tbsp sesame oil for a subtle fragrance. Stir everything together until well combined to create the seasoning sauce.
