Easy and Delicious Homemade Nut Brittle Recipe

Ingredients- 5 individual snack packs of mixed nuts (or your favorite nut blend)
- 1 Tbsp corn syrup (or honey)
- 2 Tbsp sugar (granulated or brown sugar)
Cooking Instructions
Step 1
First, open the 5 snack packs of mixed nuts and place them in a dry pan. Lightly toast them over low heat for about 2-3 minutes. This enhances their nutty aroma and removes moisture, making them extra crispy.
Step 2
While the nuts are toasting, combine 1 Tbsp of corn syrup and 2 Tbsp of sugar in a small bowl. Stir well to create the syrup base.
Step 3
Once the nuts are lightly toasted, reduce the heat to very low or turn it off briefly. Pour the prepared corn syrup and sugar mixture over the nuts and stir quickly to coat each nut evenly.
Step 4
Prepare your mold for setting the brittle. If using a Takoyaki pan, carefully place 2-3 coated nuts into each mold indentation and press lightly to shape. (Alternatively, you can use a square pan lined with parchment paper.)
Step 5
If using parchment paper, line a square pan or tray with it, folding up the edges slightly to create a border. Pour the syrup-coated nuts into this prepared mold and spread them out thinly.
Step 6
Use the back of a spoon or a rolling pin to gently press down and flatten the nuts into an even layer. Aim for a thickness of about 0.5 cm (about 1/4 inch). Ensuring an even thickness is key for consistent results.
Step 7
Let the nut brittle set in a cool, dry place for at least 2-3 hours, or preferably overnight, until it is completely hardened. This allows the moisture to evaporate and the brittle to become firm and breakable. Once fully hardened, use a knife to cut it into bite-sized pieces. Enjoy your homemade nut brittle!
