Baek숙 Ingredients

  • 2 Young Chickens (approx. 500-600g each)
  • 1/2 cup Glutinous Rice (based on a standard rice bowl)
  • 1 pack Baek숙 Herbal Soup Kit
  • 10 cloves Garlic
  • 3cm piece of Green Onion (white part, optional)

Cooking Instructions

Step 1

First, prepare the glutinous rice. Measure about half a rice bowl’s worth and rinse it thoroughly. Soak the rice in water for 2 to 3 hours beforehand. While the rice soaks, let’s prepare the chicken. Make sure it’s clean! Use scissors to trim the tip of each wing and remove the tail. Gently peel off any excess fat around the neck area. Reach inside the cavity and rub to remove any residual blood clots or internal debris. To help the chicken hold its shape, make a small incision at the back of each leg and tuck the other leg through it. Be careful not to cut too deeply, or the leg might detach during cooking. Aim for a cut through the skin and a little into the meat.

Now, carefully stuff the soaked glutinous rice into the chicken cavity. Add about 5 whole garlic cloves. This will help keep the rice from spilling out while cooking. (Feel free to add other ingredients like jujubes, chestnuts, or ginkgo nuts according to your preference. Be mindful not to overfill with rice, as it can expand and leak out from the neck area!)

Cross the prepared chicken legs and tuck them in to further secure the rice and garlic inside. If you have kitchen twine, you can use it for a neater presentation, but it’s not essential. Even if the shape isn’t perfect, the taste will be just as delicious!

Place the stuffed chicken into a pot and add water. Pour enough water to cover the chicken completely. Add the herbal soup kit. Gently place the chicken into the pot, ensuring the stuffed side faces upwards, to prevent the filling from escaping.

Cover the pot with a lid and bring it to a rolling boil over high heat for at least 5 minutes. Once boiling, reduce the heat to medium and let it simmer for about 30 minutes. The key is to cook it thoroughly until the chicken is tender and the broth turns milky white. While the chicken cooks, prepare your seasoning: a little salt (sea salt or kosher salt), pepper, and toasted sesame seeds.

Serve the hot Baek숙 in individual earthenware pots (ttukbaegi) for the best experience. Garnish with finely chopped green onions on top, if desired. I enjoyed mine with homemade pickles and well-fermented radish kimchi. Although I shared one leg with my family, it felt like a whole chicken per person! Haha.
