Nutrient-Rich Rice Cake and Beef Baby Food Recipe
This is a hearty and delicious baby food, perfect as a snack or a meal replacement for little ones who are picky eaters. We’ve used readily available tteokguk tteok (rice cakes for soup) to create a special dish. It’s an excellent option for both baby food and a nutritious snack for growing children.
Main Ingredients- 100g Beef (ground or finely chopped)
- 100g Rice Cakes (tteokguk tteok)
- 30g Green Onions
- 10g Potato Starch
- 50g Persimmon
- 30g Jujubes (Dates)
Cooking Instructions
Step 1
First, pat the beef dry with paper towels to remove excess blood. Then, finely mince or chop the beef. Marinate the minced beef with a pinch of black pepper and a little onion juice, mixing well. This process helps to remove any gamey odor from the beef and tenderizes it.
Step 2
Cut the rice cakes into small, bite-sized pieces suitable for your baby. If the rice cakes are too hard, you can briefly blanch them in boiling water to soften them. After blanching, rinse the rice cakes with cold water to prevent them from sticking together.
Step 3
Combine the prepared beef, chopped rice cakes, and finely chopped green onions in a bowl. Add the potato starch. Potato starch will help bind the ingredients together and give the mixture a smoother texture. Mix everything thoroughly until well combined.
Step 4
Shape the mixture into small, round balls that are easy for your baby to eat. You can make them bite-sized or in a shape that’s easy for little hands to hold. Place the shaped balls into a preheated air fryer at 180°C (350°F) and cook for about 10-12 minutes until golden brown. Flipping them halfway through will ensure even cooking.
Step 5
Prepare the ingredients for the sauce: persimmon and jujubes. Peel and deseed the persimmon, then chop it into small pieces or mash it. Remove the pits from the jujubes and chop them finely. In a small pot, combine the prepared persimmon and jujubes with a little water. Cook over low heat, stirring occasionally to prevent sticking, until the persimmon is soft and breaks down into a smooth sauce.
Step 6
Arrange the air-fried rice cake and beef balls on a plate. Generously spread the prepared persimmon and jujube sauce over the balls. Serving with the sauce makes them more moist and flavorful.
Step 7
Tip: If making the persimmon and jujube sauce separately seems too much effort, you can simply mash a ripe Fuyu persimmon and use it as a sauce. The natural sweetness of the ripe persimmon will add wonderful flavor to the baby food.
Step 8
Another Tip: If you prefer not to use the air fryer, you can steam the shaped mixture instead. Steaming will result in a soft texture that is also great for babies. Choose the cooking method that best suits your baby’s chewing abilities and preferences.
