Essential Ingredients
- 1 cup soaked mung beans
- 1/2 cup soaked glutinous rice
- 200g chicken breast
- 2 whole garlic cloves
- 5cm piece of green onion
- 3 dried jujubes
- 3 peeled chestnuts
- A little finely chopped green onion (for garnish)

Chicken Marinade
- 1/2 Tbsp minced garlic
- A pinch of salt
- A pinch of black pepper

Cooking Instructions
Step 1
Begin by thoroughly washing the chicken breast. Place it in a pot along with the 2 whole garlic cloves, the 5cm piece of green onion, and 4 cups of water. Bring to a boil over high heat.

Once the water reaches a rolling boil, reduce the heat to medium and simmer for about 20 minutes, or until the chicken is fully cooked. Don’t discard the chicken broth; it’s packed with flavor and essential for the porridge!

Carefully remove the cooked chicken breast from the pot and set it aside to cool slightly. While it’s still warm (but safe to handle), shred it into small, bite-sized pieces using your fingers.

In a small bowl, combine the shredded chicken with the marinade ingredients: 1/2 Tbsp minced garlic, a pinch of salt, and a pinch of black pepper. Gently mix to ensure the chicken is evenly coated. Let it marinate for a few minutes.

Return the reserved chicken broth to the pot. Add the soaked glutinous rice, soaked mung beans, dried jujubes, and peeled chestnuts. Bring this mixture to a simmer.

Cover the pot and let it cook over medium heat until the rice grains have softened and broken down, and the porridge has thickened to your desired consistency. Stir occasionally to prevent sticking to the bottom.
