Rice Ingredients
  • 1 Shiitake mushroom
  • 1/10 Carrot
  • 4 cups Rice
  • 1/2 cup Glutinous rice (sweet rice)

Simple Seasoning Sauce Ingredients
  • 6 tsp Soy sauce
  • 1 tsp Minced garlic
  • 1 tsp Minced green onion
  • 1 tsp Plum extract (Maesil-cheong)
  • 1 tsp Gochugaru (Korean chili flakes)
  • 1 tsp Sesame oil
  • 1 tsp Toasted sesame seeds
  • 1 tsp Perilla oil (Deul-gireum)

Cooking Instructions

Step 1

First, rinse 4 cups of regular rice and 1/2 cup of glutinous rice thoroughly. Drain the rice water and place the rinsed rice into your rice cooker. Then, add water for cooking. It’s recommended to use slightly less water than you normally would for this amount of rice (e.g., for 4.5 cups total rice, aim for a water level about 0.5 cm lower than usual).

Step 2

Pour 1 tablespoon of soy sauce over the rice. This allows the rice grains to absorb the savory flavor, making each bite more delicious.

Step 3

Next, add 1 teaspoon of perilla oil for a rich, nutty aroma and mix it with the rice.

Step 4

Prepare and add the vegetables. Thinly julienne the carrot. Remove the stems from the shiitake mushroom and slice them thinly. Adding these vegetables will provide delightful texture and color to the rice.

Step 5

Now, start the rice cooker. If you have a ‘multi-grain’ or ‘nutritious rice’ setting, use that, which typically takes around 40 minutes. You can also use the regular white rice setting; it will still be delicious.

Step 6

While the rice is cooking, let’s make the seasoning sauce. In a small bowl, combine 6 teaspoons of soy sauce, 1 teaspoon of minced garlic, 1 teaspoon of finely minced green onion, 1 teaspoon of gochugaru, 1 teaspoon of sweet plum extract, 1 teaspoon of fragrant sesame oil, and finally, 1 teaspoon of toasted sesame seeds. Mix everything well. You can adjust the amount of soy sauce to your preference.

Step 7

Once the rice cooker signals that the rice is done, your delicious shiitake mushroom rice is ready! Serve the rice into bowls and top generously with the prepared seasoning sauce. Mix it all together and enjoy this incredibly flavorful meal! The harmony of the mushroom aroma and the savory sauce is simply divine.
