How to Make Dakjuk, Samgyetang Broth Recipe
After making Samgyetang, Dakjuk is a must! I’ll show you how to make this nourishing chicken porridge. It’s a perfect way to use up leftover broth and chicken.
Ingredients- Samgyetang broth 500g (strained)
- Soaked glutinous rice 1/2 cup
- Shredded chicken meat from Samgyetang, 2 handfuls
- Salt (to taste)
- Black pepper (for seasoning)
Cooking Instructions
Step 1
First, prepare the chicken meat left over from making Samgyetang. Often, there’s leftover chicken breast. Shred this meat into small, bite-sized pieces. If you prefer a less stringy texture, you can also use meat from the chicken legs or wings.
Step 2
Set aside the clear broth from the Samgyetang. You’ll need about 500g of this broth. Using only the clear broth, without any solids, will help achieve a smooth texture for your Dakjuk. (If there’s a lot of fat, you can skim some of it off.)
Step 3
In a pot, combine the Samgyetang broth and the soaked glutinous rice (1/2 cup). Bring to a simmer over medium heat. It’s crucial to stir constantly with a spatula or ladle to prevent the rice from sticking to the bottom of the pot. Cook until the rice grains become soft and break down, which should take about 10-15 minutes.
Step 4
Once the glutinous rice has cooked and thickened into a porridge consistency, add the shredded chicken meat. Continue to simmer for another 2-3 minutes, allowing the chicken to meld with the rice and broth.
Step 5
Finally, season the Dakjuk with salt. Since the Samgyetang broth already has some saltiness, it’s best to add salt gradually while tasting. Start with less salt and adjust as needed for your preference.
Step 6
If desired, sprinkle a little black pepper for added aroma and flavor. Your comforting and nourishing Dakjuk is now ready! Enjoy this delicious and revitalizing chicken porridge.
