Main Ingredients

  • 1 bowl of cooked rice (warm)
  • 150g chicken breast (cooked or raw)
  • 1/5 onion (finely diced)
  • 1/5 carrot (finely diced or julienned)
  • 1/5 green onion (chopped)
  • 2 Tbsp sesame oil
  • 1 tsp salt (adjust to taste)
  • 1 tsp black pepper (adjust to taste)
  • A pinch of sesame seeds (for garnish)

For Raw Chicken Breast (To remove gaminess and tenderize)

  • 250mL milk (for soaking chicken)
  • 4 cloves garlic (to boil with chicken)

Cooking Instructions

Step 1

Let’s prepare the chicken. If you’re using pre-cooked chicken breast, shred it into bite-sized pieces and gently warm it in the microwave. If you’re starting with raw chicken breast, make a few slits in the meat, then soak it in 250mL of milk for about 20 minutes. This soaking process helps to remove any gamey odor and makes the chicken incredibly tender. After soaking, rinse the chicken thoroughly under cold running water. Place the chicken in a pot with enough water to cover, add 4 whole garlic cloves, and boil for 15-20 minutes, or until cooked through. Once cooked, remove the chicken, let it cool slightly, then shred it along the grain into bite-sized pieces for your porridge.

Step 1

Step 2

Now, let’s start cooking the porridge! Heat 2 tablespoons of sesame oil in a pot over medium-low heat. Add the finely diced onion and julienned carrot. Sauté them until the onion becomes translucent. This step is crucial for drawing out the natural sweetness from the vegetables.

Step 2

Step 3

Once the onions and carrots are translucent, add the shredded chicken breast to the pot. Stir-fry for another 1-2 minutes, allowing the chicken to absorb the flavors of the sautéed vegetables. This will enhance the overall taste of the porridge.

Step 3

Step 4

Pour in 1 bowl of warm rice and 400mL of water (or chicken broth for extra flavor) into the pot. Bring the mixture to a boil over high heat, stirring occasionally to prevent the rice from sticking. Once boiling, reduce the heat to medium-low and let it simmer gently until the rice grains break down and the porridge thickens to your desired consistency.

Step 4

Step 5

When the rice has softened and the liquid has reduced, it’s time to add the chopped green onions and season the porridge. Add 1 teaspoon of salt and 1 teaspoon of black pepper. Taste and adjust the seasoning as needed, adding more salt gradually if necessary. The goal is a subtly savory and comforting flavor, so avoid over-salting.

Step 5

Step 6

Continue to simmer for another minute to allow all the flavors to meld together. Your delicious and nourishing chicken porridge is now ready! Ladle the hot porridge into bowls and garnish with a sprinkle of sesame seeds for an added nutty aroma. This dish is made with love and care, perfect for supporting recovery and bringing comfort.
