- 1 handful fresh chives (approx. 30g, adds a refreshing aroma)
- 2 servings fresh kalguksu noodles (flat wheat noodles)

Step 1
Today, we’re making a nutritious Chicken and Chive Noodle Soup (Dak-kalguksu) that combines the rich flavor of chicken broth with the freshness of chives. It’s the perfect dish to warm you up on a chilly day.
Step 2
First, let’s prepare the chicken. Place the chicken breast in boiling water and simmer until it’s tender enough to be easily shredded, about 15-20 minutes. This process helps to extract the chicken’s delicious flavor into the broth.

Once the chicken is cooked, remove it from the pot. Strain the broth through a sieve to get a clear liquid. Pour the 500ml of clear chicken broth back into the pot. Season it with 2 tablespoons of fish sauce (or soy sauce), 1 teaspoon of salt, a pinch of black pepper, and 1 teaspoon of minced garlic. Bring it to a gentle boil, allowing the flavors to meld. Taste and adjust the seasoning if necessary, adding more salt or fish sauce to your preference.

Shred the cooked chicken breast into bite-sized pieces. Wash the chives thoroughly and cut them into lengths of about 5-6 cm. Adding plenty of fresh chives will enhance the soup’s refreshing aroma.

Once the broth is boiling, add the kalguksu noodles and cook them. When the noodles are about half-cooked (approximately 3-4 minutes), add the shredded chicken and the chopped chives. Cook for just another 1-2 minutes, until the chives are slightly wilted. Be careful not to overcook, as this can diminish the chives’ fresh flavor.
