Start with your whole chicken, intended for roasting. The one we’re using today is about 1kg, which is quite large. If the chicken is too big, it can be challenging to cook it evenly all the way through. For future attempts, consider using a slightly smaller chicken, like one meant for samgyetang (ginseng chicken soup), or if using a large chicken, make a few strategic cuts to help the marinade penetrate better and cook more evenly. Alternatively, you can cook the exterior first, then dismantle the chicken and roast the pieces again.

Carefully remove the fatty, oily sac near the tail end of the chicken, as this can sometimes cause an off-putting smell. Trimming this excess fat will result in a cleaner, more pleasant flavor.

After trimming any unwanted parts, generously coat the entire chicken with olive oil. While we’re keeping the chicken whole for this recipe, making a few shallow cuts into the meat can help the seasonings penetrate deeper and ensure even cooking. If you prefer the classic whole chicken look, you can omit the cuts for now.

Wearing disposable gloves, sprinkle the garlic herb salt and black pepper evenly over the chicken. Gently rub the seasonings into the skin and crevices, ensuring every part of the chicken is coated. This step is crucial for building flavor from the inside out.

If this happens, carefully remove the chicken, cut it into serving pieces, and return it to the air fryer for an additional 10 minutes at 200°C (392°F). This ensures the inside is perfectly cooked while the skin becomes extra crispy.
