I enjoyed some nostalgic street toast for brunch this weekend. With plenty of sugar and ketchup, it’s impossible not to love it! The crunchy texture of the cabbage is also wonderful. Let’s make this super simple street toast easily at home~

  • 4 slices of bread
  • 123g cabbage
  • 30g onion
  • 18g carrot
  • 2 eggs
  • Butter, as needed

First, let’s prepare the vegetables, which are the star of street toast. Finely shred the cabbage, onion, and carrot. The thinner you shred them, the better the texture and the more flavor will infuse into the toast.

In a mixing bowl, crack in 2 eggs and add 2 pinches of salt. Whisk them together well. Then, add about half of your prepared shredded vegetables to the egg mixture. Use chopsticks or a fork to thoroughly mix everything, ensuring the vegetables are well coated with the egg.

Heat a frying pan over medium heat and add a generous amount of butter. Ladle about half of the vegetable and egg mixture into the pan. Spread it out to form a rectangular shape, similar to how street toast is made. Cook until golden brown on both sides over low to medium heat. Set these two cooked patties aside.

Add a little more butter to the same frying pan. Place the bread slices in the pan and toast them until golden brown and slightly crispy on both sides. Crispy toast adds a delightful texture to the sandwich.
