Basic Ingredients- 160g All-purpose flour
- 150g Cornmeal/Corn flour
- 60g Sugar
- 2 pinches Salt
- 6g Baking powder
- 50g Cold unsalted butter, diced
- 1 Large egg
- 1 Egg yolk
- 160ml Cold milk
- 10g Black sesame seeds
Cooking Instructions
Step 1
First, sift the all-purpose flour, cornmeal, sugar, salt, and baking powder together into a bowl at least twice. Sifting helps to aerate the dry ingredients, preventing clumps and resulting in a softer texture.
Step 2
Lightly mix the sifted dry ingredients with a whisk or spatula until just combined. Ensure all ingredients are evenly distributed.
Step 3
Cut the cold butter into small, 1cm cubes. Add the cold butter cubes to the dry ingredients. Using a pastry blender or a scraper, cut the butter into the flour mixture until it resembles coarse crumbs. It’s important to work quickly to prevent the butter from melting.
Step 4
In a separate bowl, whisk the egg and egg yolk together until smooth, then pour in the cold milk and mix well. Pour this liquid mixture into the flour and butter mixture. Using a spatula, gently fold the ingredients together until just combined. Be careful not to overmix, as this can develop gluten and make the cornbread tough. Mix only until no dry flour streaks remain.
Step 5
Add the black sesame seeds to the dough and gently mix them in. Ensure the sesame seeds are evenly distributed throughout the dough. Again, avoid overworking the dough at this stage.
Step 6
Once the dough is formed, gather it into a ball in the bowl. Flatten the dough slightly, place it in a zip-top bag, and refrigerate for at least 30 minutes to chill. This chilling process will firm up the dough, making it easier to handle and enhancing the flavor.
Step 7
After chilling, divide the dough into equal portions of about 80g each, or divide it into your desired sizes and shapes. Gently shape them into flattened rounds or place them into molds. Make a shallow cross-shaped score in the center of each bun with a knife. This will help the cornbread puff up nicely during baking.
Step 8
Brush the tops of the scored buns evenly with the egg yolk (this step is optional). Brushing with egg yolk will give the cornbread a beautiful golden-brown color when baked.
Step 9
Bake in a preheated oven at 180°C (350°F) for approximately 25 minutes. The cornbread is done when the tops are golden brown and a skewer inserted into the center comes out clean. Baking time may vary slightly depending on your oven. Enjoy while warm for the best flavor!
