I’ve been craving the salad bread I used to love as a child, so I decided to make it myself! This is the old-fashioned style where the bread is deep-fried, similar to a korokke. Making it at home makes the bread taste even better and feel more special. I’ve always loved salad bread since I was young, but as I got older, it became harder to find, and the taste wasn’t the same, which was always a bit disappointing. Making it myself this time was surprisingly not difficult, and the best part is being able to enjoy it fresh whenever I want! My youngest son, who usually dislikes vegetables, actually said he thought he might like cabbage after eating this! He enjoyed it so much without even realizing cabbage was in it, which was a pleasant surprise. This old-fashioned salad bread is so delicious, even picky eaters can’t resist it. Bread Dough Ingredients

  • 200g Bread flour
  • 100g Sweet rice flour
  • 1 Egg
  • 150g Milk
  • 1 tsp Salt
  • 2 Tbsp Sugar
  • 5g Active dry yeast
  • 1 Tbsp Olive oil

Frying & Filling Ingredients

  • Cooking oil (for frying)
  • 4 Leaves Cabbage
  • A little Carrot
  • A little Cucumber
  • 1/4 can Mild Spam

Cooking Instructions

Step 1

First, let’s make the bread dough. In a bread maker or a large bowl, combine bread flour, sweet rice flour, egg, milk, salt, sugar, active dry yeast, and olive oil. Use the dough-making and proofing function of your bread maker, or knead by hand until you have a soft and elastic dough. Once the dough is ready, remove it from the bread maker or bowl.

Take the dough out and form it into a single ball. Then, divide it into portions of about 200g each (this will make 3-4 breads). Lightly dust the divided dough portions with flour and roll them into smooth balls. This process is called ’rounding’.

Let the rounded dough balls rest for about 10-15 minutes (this is called bench rest). After resting, shape the dough into your desired salad bread form. You can flatten them slightly or shape them into elongated rolls. Remember to make them not too thick, as they will puff up when fried.

Coat the shaped bread dough evenly with breadcrumbs. Applying breadcrumbs is crucial for achieving that extra crispy texture after frying.

Heat a generous amount of cooking oil in a deep pot to about 170°C (338°F). Carefully place the breadcrumb-coated dough into the hot oil. Fry until golden brown and crispy on both sides. If the bread floats, flip it gently to ensure even cooking.

While the bread is frying, prepare the filling ingredients. Finely julienne the cabbage, carrot, and cucumber. Dice the Mild Spam into small cubes. For a cleaner taste, you can briefly blanch the diced Spam in boiling water to remove impurities.

In a bowl, combine the julienned cabbage, carrot, cucumber, and diced Spam. Add mayonnaise, honey mustard, ketchup, and a little sugar. Mix well until all ingredients are evenly coated, creating your delicious salad dressing. Feel free to adjust the amount of sugar or mayonnaise to your preference.

Once the fried bread has cooled slightly on a wire rack, use a knife to carefully cut an opening on the top or side of the bread to create space for the filling. Be careful not to cut all the way through. Letting the bread cool a bit will prevent it from breaking apart.

Generously spoon the prepared salad filling into the opening you made in the bread. Make sure not to overfill, so the filling doesn’t spill out.
