Nostalgic Fluffy Potato Egg Salad
A Homestyle Classic! How to Make Delicious Potato Egg Salad
I’ve been craving the comforting taste of the potato and egg sandwiches my mom used to make when I was little! Making this potato egg salad myself has brought back those cherished childhood flavors. It’s so much more satisfying than just plain steamed potatoes. This recipe will help you recreate that authentic, old-fashioned taste. It’s a simple yet hearty homemade salad that evokes fond memories.
Main Ingredients- 4 medium potatoes
- 3 fresh eggs
- 1/2 onion
- 3 Tbsp sweet corn kernels
- 3 crab sticks (imitation crab meat)
Flavorful Seasonings- 4 Tbsp mayonnaise
- 1 Tbsp sugar
- 1 Tbsp honey mustard
- 4 Tbsp mayonnaise
- 1 Tbsp sugar
- 1 Tbsp honey mustard
Cooking Instructions
Step 1
First, wash the potatoes thoroughly, keeping the skins on. Place them in a pot, cover with water, and add half a tablespoon of salt to season them subtly as they cook. Boil for about 20 minutes, or until the potatoes are tender and easily pierced with a fork.
Step 2
While the potatoes are boiling, place the 3 eggs in another pot and boil them until hard-boiled. Once cooked, rinse the eggs under cold water and peel them.
Step 3
Finely dice half an onion. To reduce its sharp flavor and add a pleasant crunch, soak the diced onion in cold water for about 10 minutes. After soaking, drain it well by squeezing out the excess water. This step greatly enhances the salad’s flavor.
Step 4
Drain the sweet corn kernels thoroughly using a sieve. You’ll need about 3 tablespoons.
Step 5
Shred or finely chop the crab sticks. Be gentle to avoid breaking up the meat too much.
Step 6
Drain the well-cooked potatoes. While they are still hot, use a spoon or fork to mash the potatoes until they are fluffy and lump-free. Mashing while hot makes them much smoother.
Step 7
Add the peeled and chopped hard-boiled eggs to the mashed potatoes. Use a spoon or fork to finely chop the eggs and mix them evenly with the potatoes. Ensure everything is well combined without large chunks.
Step 8
Now, transfer all the prepared ingredients into a large bowl: the mashed potato and egg mixture, the drained diced onion, the drained corn, and the shredded crab sticks. Mix them gently.
Step 9
It’s time to add the dressing ingredients that will bring the potato egg salad to life. Add 4 tablespoons of mayonnaise, 1 tablespoon of sugar, and 1 tablespoon of honey mustard. Mix everything gently to combine, being careful not to mash the ingredients further.
Step 10
If you prefer a sweeter taste, you can add an extra tablespoon of honey instead of sugar. Gently mix until all ingredients are well incorporated, and your delicious potato egg salad is ready! A pinch of black pepper can also be added according to your preference.
Step 11
I served this salad as a side dish for dinner tonight, and my husband absolutely loved it and gave it high praise! I felt so proud that homemade salad could be this delicious.
Step 12
Since you can whip this up quickly with common ingredients from your fridge, it’s perfect as a children’s snack or a brunch item. Why not try making this delightful potato egg salad that the whole family can enjoy together? ^^
