Stew Ingredients
  • 1 can canned saury (including the liquid)
  • 1/4 head well-fermented Napa cabbage kimchi (or about 200g)
  • 2 stalks young kimchi (optional, adds a unique flavor)
  • 2 stalks green onion (both white and green parts)

Seasoning Ingredients
  • 2 Tbsp perilla oil (adds a nutty aroma)
  • 1/2 Tbsp sugar (balances the acidity of the kimchi)
  • 1/2 Tbsp doenjang (soybean paste, for deep umami)
  • 1 Tbsp minced garlic
  • 1 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions

Step 1

First, prepare the kimchi. Chop the well-fermented Napa cabbage kimchi into bite-sized pieces, about 2-3 cm. If using young kimchi, chop that as well. (Chef Baek Jong-won often prefers just Napa cabbage kimchi.)

Step 2

Slice the green onions diagonally. It’s best to use both the white and green parts for a more balanced flavor.

Now, let’s stir-fry. Heat 2 tablespoons of perilla oil in a pot over medium heat. Add the chopped kimchi and sauté until softened and fragrant. Stir in 1/2 tablespoon of sugar to balance the sourness of the kimchi. Next, add the entire can of saury, including its liquid. Pour in 1 can of water (use the empty saury can to measure). Add 1/2 tablespoon of doenjang, 1 tablespoon of minced garlic, and 1 tablespoon of gochugaru. Stir everything well. Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer for about 20-30 minutes, allowing the flavors of the kimchi and saury to meld beautifully.

Step 4

Finally, add the sliced green onions and simmer for another few minutes until they are tender and their fresh aroma infuses the stew.
