Stew Ingredients

- 2 stalks young kimchi (optional, adds a unique flavor)
- 2 stalks green onion (both white and green parts)
Seasoning Ingredients
- 2 Tbsp perilla oil (adds a nutty aroma)
- 1/2 Tbsp sugar (balances the acidity of the kimchi)
- 1/2 Tbsp doenjang (soybean paste, for deep umami)
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp perilla oil (adds a nutty aroma)

- 1/2 Tbsp doenjang (soybean paste, for deep umami)

Cooking Instructions
Step 1
First, prepare the kimchi. Chop the well-fermented Napa cabbage kimchi into bite-sized pieces, about 2-3 cm. If using young kimchi, chop that as well. (Chef Baek Jong-won often prefers just Napa cabbage kimchi.)

Slice the green onions diagonally. It’s best to use both the white and green parts for a more balanced flavor.

Now, let’s stir-fry. Heat 2 tablespoons of perilla oil in a pot over medium heat. Add the chopped kimchi and sauté until softened and fragrant. Stir in 1/2 tablespoon of sugar to balance the sourness of the kimchi. Next, add the entire can of saury, including its liquid. Pour in 1 can of water (use the empty saury can to measure). Add 1/2 tablespoon of doenjang, 1 tablespoon of minced garlic, and 1 tablespoon of gochugaru. Stir everything well. Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer for about 20-30 minutes, allowing the flavors of the kimchi and saury to meld beautifully.

Finally, add the sliced green onions and simmer for another few minutes until they are tender and their fresh aroma infuses the stew.
