Remember the sweet and delicious tteokbokki from in front of your elementary school? Even with simple ingredients, it had a wonderfully sweet broth. Let’s recreate that beloved flavor!
Tteokbokki Ingredients- 4 sheets of square fish cakes
- 1 large bowl of tteokguk rice cakes (approx. 300g)
- 1/8 head of cabbage
- 1/2 onion
- 1/2 stalk of green onion
- 1 Tbsp minced garlic
Tteokbokki Seasoning- 1/3 cup gochujang (approx. 80g)
- 2 Tbsp sugar (approx. 30g)
- 2 Tbsp soy sauce (approx. 30ml)
- 1 liter water (4 cups)
- 1/3 cup gochujang (approx. 80g)
- 2 Tbsp sugar (approx. 30g)
- 2 Tbsp soy sauce (approx. 30ml)
- 1 liter water (4 cups)
Cooking Instructions
Step 1
First, prepare all your ingredients. If you’re using tteokguk rice cakes, and they are stuck together, soak them in cold water for about 10 minutes. This will soften the rice cakes and help them absorb the sauce better. Chop the cabbage into large pieces and the onion into similar-sized chunks. Cut the fish cakes into bite-sized pieces (about 3-4 cm). Slice the green onion diagonally to add aroma later.
Step 2
In a pot, combine the chopped cabbage and onion. Add the gochujang, sugar, soy sauce, and 1 liter of water. Simmering the vegetables first helps to draw out their natural sweetness and a refreshing flavor, making the broth richer and more complex. Cover the pot and let it simmer over medium heat for about 15 minutes, allowing the vegetable flavors to infuse the liquid.
Step 3
Once the vegetable flavors have melded into the broth, add the prepared square fish cakes. Continue to simmer for another 10 minutes. The fish cakes will absorb the flavorful broth, becoming wonderfully tender and tasty. Boiling until the fish cakes are soft is key here.
Step 4
Now it’s time to add the rice cakes. Add the tteokguk rice cakes and cook for about 5 more minutes. It’s important to cook until the rice cakes are soft and have absorbed the delicious flavors of the sauce. You’ll notice the broth has slightly thickened compared to when you first started. Stir in 1 tablespoon of minced garlic now. Adding garlic towards the end preserves its fresh aroma and enhances the overall flavor.
Step 5
Finally, add the diagonally sliced green onions and simmer for another brief moment. Your delicious ‘schoolyard style’ tteokbokki is ready! Serve it generously with plenty of broth. Enjoy this sweet and savory tteokbokki with your family, and let it bring back those cherished childhood memories! 😊
