Easy and Delicious Zucchini Pancake Recipe
A beloved side dish my mom used to make often during my childhood! Today, I remembered those zucchini pancakes from my childhood and decided to make them. The recipe is the same, but maybe the taste isn’t quite the same because it’s just my imagination? T_T
Main Ingredients- 1 Korean zucchini (aep-hobak)
- Pancake mix (generous amount, to your preference)
- 2 eggs
Seasoning- Salt (a pinch)

Cooking Instructions
Step 1
Prepare one fresh Korean zucchini. After washing it thoroughly, slice it into about 0.5 cm thick rounds. If they are too thin, they’ll break easily, and if they’re too thick, they might not cook through. Slicing them to a thickness that allows for a crisp texture is ideal. Personally, I prefer them slightly thicker for a better bite!
Step 2
Lightly sprinkle a pinch of salt on one side of each zucchini slice. Salting the zucchini will draw out moisture, which helps to achieve a crispier texture. About 5 minutes of salting is sufficient. Be careful not to salt them for too long, as this can make the zucchini mushy.
Step 3
Pour a generous amount of pancake mix into a large bag or a ziplock bag. Add the salted zucchini slices and shake the bag vigorously, just like you would when seasoning fries. Ensure the pancake mix coats each zucchini slice evenly and thinly. This step is crucial for achieving deliciously crispy pancakes!
Step 4
Crack 2 fresh eggs into a bowl. Using a fork or whisk, beat the eggs until the yolks and whites are well combined. Be careful not to over-whisk, as too much foam can cause the pancakes to break apart. Just beat them until they are lightly mixed.
Step 5
Heat a frying pan with a generous amount of cooking oil over medium heat. Place the coated zucchini slices into the hot pan, and then gently pour some of the beaten egg mixture over them. Pan-fry until both sides are golden brown and beautifully cooked. Keep an eye on the heat to prevent burning, which will result in perfect zucchini pancakes.
Step 6
Serve immediately while warm, and you’ll have delicious zucchini pancakes that evoke the taste of your mom’s cooking! Enjoy the irresistible crispy exterior and tender interior. They make for a perfect meal when served with freshly cooked rice.
