Delicious Bibim Dangmyeon Recipe Using No Brand Green Bean Flat Glass Noodles for a Chewy Texture
To contribute a little to household finances, I bought a bag of No Brand green bean flat glass noodles. Initially, I intended to add them to Dakbokkeumtang (spicy braised chicken), but I soon realized these noodles weren’t meant for boiling in water like regular glass noodles, so I left them in the cupboard. Without cooking instructions on the packaging, I pondered how to use them without wasting them. After soaking them in water for over an hour and then stir-frying them in oil, I discovered they could be enjoyed with the chewy texture we associate with glass noodles. Thus, this time, I decided to make Bibim Dangmyeon using these No Brand flat glass noodles. While traditional Bibim Dangmyeon involves boiling the noodles and then mixing them with sauce, this recipe uniquely stir-fries the No Brand flat glass noodles in oil to enhance their flavor, then mixes them with the sauce for a different kind of enjoyment. The chewy noodles, crisp vegetables, and savory sauce will come together to create an unforgettable taste!

Cooking Instructions
Step 1
First, prepare 80g of No Brand Green Bean Flat Glass Noodles. The key point for these noodles, unlike regular glass noodles, is to soak them before use.
Step 2
Place the glass noodles in a bowl and cover them with water. Soak them for at least 1 hour, or until the noodles are soft and pliable. The longer you soak them, the chewier they will become.
Step 3
Thinly julienne the square fish cake along its shorter side. This makes it easier to eat, especially for children, and helps it absorb the sauce better, making it more delicious.
Step 4
Cut the green onion (1 stalk) diagonally, separating the white and green parts. Wash and thinly julienne the carrot (1/4).
Step 5
Now, let’s make the delicious sauce! In a small bowl, combine 1/2 Tbsp soy sauce, 1/2 Tbsp gochugaru, 1/2 Tbsp gochujang, 1 Tbsp cheongju (or mirin), 1 Tbsp sweet plum extract, 1/4 Tbsp minced garlic, and 1 Tbsp sesame seeds. Mix well to create the sauce.
Step 6
Heat 1 Tbsp cooking oil and 1 Tbsp sesame oil in a pan over medium heat. Add the julienned fish cake, carrot, and the white parts of the green onion, and stir-fry until the vegetables are slightly softened.
Step 7
Once the vegetables are adequately stir-fried, add the soaked and drained glass noodles to the pan and stir-fry them together. Make sure to stir constantly to prevent the noodles from sticking to the pan.
Step 8
When stir-frying the noodles, adding a small amount of water (about 1-2 Tbsp) intermittently will help the noodles cook more tenderly and chewily. Continue to stir-fry until the noodles become translucent and develop a chewy texture. This step is crucial for the final texture of your Bibim Dangmyeon.
Step 9
When the noodles are almost cooked, add the green parts of the green onion and stir-fry for just a little longer. The fresh aroma of the green onion will add even more flavor.
Step 10
Finally, add all the prepared sauce to the stir-fried noodles and vegetables. Mix everything thoroughly so that the sauce evenly coats every strand of noodle. Your delicious No Brand Flat Glass Noodles Bibim Dangmyeon is now complete! Enjoy it while it’s warm.
