Main Ingredients

  • 1.5L Anchovy and Kelp Broth
  • 1/2 head Baby Napa Cabbage
  • 200g Beef Short Ribs
  • 1/2 stalk Green Onion
  • 200g Tofu
  • 2 Cheongyang Peppers (Korean chili peppers)
  • 1 Red Bell Pepper

Seasoning

  • 2 Tbsp Soybean Paste (Doenjang)
  • 1 Tbsp Soup Soy Sauce (Guk-ganjang)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Perilla Oil

Cooking Instructions

Step 1

Prepare all ingredients: Wash the baby napa cabbage, green onion, cheongyang peppers, and red bell pepper thoroughly. Chop the baby napa cabbage into bite-sized pieces. Slice the green onion diagonally and mince the chili peppers. Cut the tofu into cubes.

Heat a pot over medium heat and add 1 Tbsp of perilla oil.

Once the oil is warm, add 1 Tbsp of minced garlic and stir-fry until fragrant.

Add 200g of beef short ribs and cook until the meat turns white on the outside. Stir-frying the meat at this stage helps to reduce any gamey odors and enhance its flavor.

Pour in 1.5L of the prepared anchovy and kelp broth. Bring it to a boil over high heat. Once boiling, skim off any impurities that rise to the surface.

When the broth is boiling, dissolve 2 Tbsp of soybean paste through a sieve into the pot. Using a sieve ensures the soybean paste dissolves smoothly without lumps.

Add 1 Tbsp of soup soy sauce to season the stew.

Add 1/2 head of baby napa cabbage to the pot. Once it comes back to a boil over high heat, reduce the heat to medium and simmer for 5 minutes, or until the cabbage is tender.

After 5 minutes, add the 200g of cubed tofu.

Add the 1/2 stalk of diagonally sliced green onion.
