  • Fresh oysters 150g
  • Radish 80g
  • Winter squash or kabocha squash 80g
  • Scallions 6 stalks

Batter Ingredients

  • Pancake mix or all-purpose flour 110g (approx. 2/3 cup or 11 Tbsp)
  • Cold water 100g (approx. 1/2 cup)
  • Egg 1
  • Salt 1 tsp

First, prepare the fresh oysters (150g) by placing them in a sieve. Gently rinse them under cold running water to remove any impurities. Be careful not to wash them too vigorously, as this can break them apart.

Prepare the napa cabbage (150g, about 2-3 large leaves), radish (80g), and winter squash or kabocha squash (80g). Peel and wash these vegetables thoroughly. Then, slice them thinly into strips, about 0.5cm thick. (You can omit the squash or radish depending on what you have, and using Korean lettuce for wraps (ssam baechoo) is also a great option.)

For color, slice 6 scallion stalks to a similar length as the julienned vegetables. With the ingredients prepped, your pancake is almost ready to be made!

Now, it’s time to mix the batter. In a large bowl, combine all the prepared ingredients: the napa cabbage, oysters, and julienned vegetables. This is where everything comes together.

Add the batter ingredients and mix well. Combine the pancake mix or flour (110g, about 2/3 cup or 11 Tbsp), cold water (100g, slightly less than the flour), 1 egg, and 1 tsp of salt. Whisk until smooth and well combined, ensuring there are no lumps. (You can also add other flours like Jerusalem artichoke powder for a different flavor. The batter consistency should be thick enough to coat the ingredients well, but not too watery.)
