Myeongran Frittata: A Creamy and Flavorful Italian Omelet Delight

What is Frittata? According to Wikipedia: Frittata is an Italian dish similar to an omelet. It contains finely chopped vegetables, meats, cheese, or pasta as fillings. If you make a crust in a pie tin and place the frittata on top, it becomes a quiche, and if you add a lot of potatoes and make a frittata, it’s a Spanish omelet. Compared to a basic omelet where you might waste time shaping it and end up burning the bottom, a frittata is easier to make. Plus, slicing and serving it makes it look more impressive, so it’s nice to have a frittata for a special brunch experience from time to time!

Ingredients

  • Myeongran (pollack roe) 1-2 Tbsp (roe only, membrane removed)
  • Eggs 2-3
  • Scallions 2 stalks (thinly sliced)
  • Cherry tomatoes 3-4 (quartered)
  • Butter 1 tsp
  • Garlic 3 cloves (minced)
  • Shredded Mozzarella Cheese 2/3 cup (packed)

Cooking Instructions

Step 1

First, let’s prepare all the ingredients for our frittata! Gently scoop out the Myeongran roe from its membrane and mash it lightly with a fork. Thinly slice the scallions and quarter the cherry tomatoes. Finely mince the garlic. In a separate bowl, crack the eggs and whisk them until smooth, removing any stringy bits.

Step 1

Step 2

With your ingredients prepped and ready, you can start cooking immediately. If you’re using an oven, preheat it to 180°C (350°F). Don’t worry if you don’t have an oven; a microwave can also be used as a substitute!

Step 2

Step 3

It’s best to use the smallest pan you have, about the size of your palm, for cooking the frittata. This helps the eggs puff up nicely and cook evenly. If you happen to have a small cast-iron dessert pan, that would be absolutely perfect!

Step 3

Step 4

Place the pan over low heat and add the butter. Let it melt slowly, gently swirling the pan to coat the bottom evenly.

Step 4

Step 5

Once the butter is melted, add the minced garlic and sauté until fragrant. Be careful not to burn the garlic; cook over medium-low heat. The wonderful aroma of garlic butter will soon fill your home, and your family will surely ask, ‘Honey/Mom/Sweetheart, what delicious dish are you making?’!

Step 5

Step 6

Before the garlic burns, add the quartered cherry tomatoes to the pan and sauté them with the garlic for a minute or two. The tomatoes will soften slightly and release their sweet juices.

Step 6

Step 7

Next, add the sliced scallions and stir-fry them briefly with the other ingredients. The fresh, green flavor of the scallions will add another layer of deliciousness.

Step 7

Step 8

Now it’s time to add the mashed Myeongran roe. Its salty, umami-rich flavor will beautifully complement the other ingredients.

Step 8

Step 9

Stir-fry the Myeongran roe gently for about 30 seconds to a minute, just until it’s heated through and well combined with the vegetables. Be careful not to overcook or burn it. This is the perfect moment for the flavors to meld!

Step 9

Step 10

Spread the cooked ingredients evenly in the pan. Pour in about two-thirds of the beaten egg mixture, saving the remaining one-third. Let the eggs partially set around the ingredients.

Step 10

Step 11

If you love cheese, sprinkle the shredded mozzarella evenly over the partially cooked eggs. The melting cheese will make your frittata even more delicious and visually appealing.

Step 11

Step 12

Finally, pour the remaining egg mixture over the cheese and ingredients to cover them completely. Reduce the heat to the lowest setting, cover the pan with a lid, and let it cook gently for about 3 minutes. This slow cooking ensures the bottom doesn’t burn while the eggs set.

Step 12

Step 13

Turn off the heat. Carefully place the entire pan into the preheated 180°C (350°F) oven for 3-4 minutes. If you don’t have an oven, you can use a microwave: place the pan inside and microwave on high for about 30 seconds to 1 minute. The frittata is ready when the eggs are fully set and the cheese is beautifully melted and slightly puffed.

Step 13

Step 14

Ta-da! Once you carefully remove the pan from the oven or microwave, you’ll be greeted with a wonderfully puffed and golden frittata. It’s a magical reveal!

Step 14

Step 15

For a final decorative touch, sprinkle some chopped parsley or a pinch of black pepper over the finished frittata. Slice it up while it’s warm and enjoy this delightful dish. The combination of savory Myeongran, creamy eggs, and fresh vegetables makes for a truly satisfying meal!
