Enjoy these ‘meatless meatballs’ made with savory mushrooms and tender tofu. We’re using HACCP certified ingredients for extra peace of mind!
Meatball Ingredients- 1/2 to 1 King Oyster Mushroom
- 1/3 bunch Enoki Mushrooms
- 1/3 stalk Green Onion
- 1 Tbsp Minced Garlic
- 1/4 Onion
- 1/2 pinch Salt
- 1/2 pinch Black Pepper
- 1 Egg
- 1/2 cup Breadcrumbs
- 1/2 block Tofu (approx. 150g)
Sauce Ingredients- 2 Tbsp Ketchup
- 6 Tbsp Arrabiata Spaghetti Sauce
- 2 Tbsp Oyster Sauce
- 2 Tbsp Sugar
- 1.5 to 2 Tbsp Soy Sauce
Other Ingredients- 1 cup Breadcrumbs (for coating)
- 1/4 Onion (for sauce)
- Cooking Oil (for frying)
- Cheddar Cheese slices or shredded cheese (optional)
- Parsley Flakes (for garnish, optional)
- 2 Tbsp Ketchup
- 6 Tbsp Arrabiata Spaghetti Sauce
- 2 Tbsp Oyster Sauce

- 1.5 to 2 Tbsp Soy Sauce

Cooking Instructions
Step 1
In line with the contest’s purpose, this recipe emphasizes the use of HACCP certified products for a safer and more hygienic cooking experience.
Step 2
First, prepare the mushrooms that will provide a satisfying texture, replacing the meat. Slice the king oyster mushrooms into bite-sized pieces (about 1-1.5cm). Finely mince the enoki mushrooms. This dual preparation helps maximize both texture and flavor.
Step 3
Melt butter in a frying pan over low heat. Add the sliced king oyster mushrooms and sauté gently until they absorb the buttery aroma without burning. Cooking them in butter infuses them with a delicious fragrance.
Step 4
In a mixing bowl, place half a block of tofu. Squeeze out as much water as possible using a cheesecloth or paper towels, then mash it thoroughly. Add the finely minced 1/4 onion and 1/3 green onion, the sautéed king oyster mushrooms, 1 Tbsp minced garlic, 1 egg, and 1/2 cup of breadcrumbs. Season with 1/2 pinch of salt and 1/2 pinch of black pepper. Mix well and knead the ingredients until the mixture becomes cohesive and slightly sticky. If the dough feels too wet, add a little more breadcrumbs.
Step 5
Shape the meatball mixture into bite-sized balls (about 3-4cm in diameter). As you form each ball, press firmly to expel excess moisture. This step is crucial for preventing the meatballs from falling apart during cooking. (Optional: For an extra treat, you can insert a cube of string cheese into the center of each ball before shaping.)
Step 6
Roll each shaped meatball evenly in the 1 cup of breadcrumbs, ensuring a thin, even coating. This coating will create a delightful crispiness.

Pour enough cooking oil into a deep frying pan to cover about half of the meatballs. Heat the oil over medium heat. In another frying pan, pour the prepared sauce and bring it to a simmer over low heat. Once the sauce begins to bubble, add the thinly sliced 1/4 onion and sauté briefly. Then, add the fried meatballs to the pan and toss gently to coat them evenly with the sauce. Cook for an additional 1-2 minutes, allowing the flavors to meld. (Optional: You can add any remaining mushrooms at this stage for extra flavor and texture.)
