This is a delightful stir-fried udon dish generously filled with various mushrooms known for their immune-boosting properties. It’s incredibly quick to make – just chop and stir-fry the ingredients! Perfect as a satisfying one-bowl meal, it’s also a fantastic recommendation for your dinner or weekend menu.
Ingredients- 1 serving of chewy udon noodles
- 1/2 fresh king oyster mushroom
- 2 shiitake mushrooms
- Appropriate amount of oyster mushrooms
- A little bit of carrot
- 1/4 onion
- 3 strips of bacon
- 2 Korean green chili peppers (optional, for heat)
- 1/2 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin or sake)
- 1 Tbsp soy sauce
- 1/2 Tbsp oyster sauce
- Pinch of ground black pepper
Cooking Instructions
Step 1
– Prepare the Ingredients – Chop the carrot and onion into similar sizes. Prepare the oyster mushrooms in roughly the same quantity as the other mushrooms. Adjust the amount of Korean green chili peppers according to your spice preference.
Step 2
– Prepare the Udon Noodles: Soak the udon noodles in warm water beforehand. This helps to remove any greasiness or a slightly sour taste they might have, allowing them to loosen up nicely for cooking. Soaking them in warm water and rinsing 2-3 times during this process can further improve their texture.
Step 3
– Prepare the Mushrooms and Other Vegetables: Remove the stems from the shiitake mushrooms and slice them about 0.2 cm thick. Slice the king oyster mushrooms and onion into similar thicknesses. Tear the oyster mushrooms into bite-sized pieces by hand. Slice the carrot slightly thinner than the other ingredients for a better texture. Cut the bacon into thick, approximately 1 cm pieces. Finely chop the Korean green chili peppers.
Step 4
– Stir-fry Bacon and Garlic: Place the bacon in a pan over medium heat and cook until it renders its fat. Once the bacon is lightly browned and has released its oil, add the minced garlic and stir-fry together until fragrant, about 30 seconds.
Step 5
– Add Mushrooms and Aromatics: When the garlic turns golden, add the prepared shiitake mushrooms, king oyster mushrooms, and onion to the pan. Drizzle in the cooking wine and soy sauce, then stir-fry everything together. This step helps to deepen the flavors of the vegetables and mushrooms.
Step 6
– Combine with Noodles: Once the mushrooms have softened and the vegetables are tender, add the pre-soaked udon noodles, thinly sliced carrots, and chopped Korean green chili peppers. Add the oyster sauce to the pan. Stir-fry everything to combine well and coat the noodles and vegetables evenly.
Step 7
– Finishing Touches and Seasoning: If the mixture seems too dry while stir-frying, add a tablespoon or two of water as needed, and continue to cook for about 2 minutes. Finish by sprinkling ground black pepper over the dish. Tip: Taste the dish before serving and adjust seasoning if necessary by adding a little more oyster sauce if it’s not salty enough.
