  • Difficulty : Beginner

Main Ingredients
  • 250g thinly sliced beef for bulgogi
  • 1 king oyster mushroom
  • 1/2 pack enoki mushrooms
  • 1 onion
  • 2 stalks green onions
  • 1 Korean chili pepper (optional)

Golden Ratio Bulgogi Marinade
  • 4 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp sugar (adjust to taste)
  • 2 Tbsp mirin (or cooking wine)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sesame oil
  • 1 tsp sesame seeds
  • 2 Tbsp chopped green onion (for marinade)
  • 1 Tbsp chopped Korean chili pepper (for marinade, optional)

Cooking Instructions

Step 1

1. Prepare the Vegetables: First, thinly slice the onion into 0.5cm thick pieces. Cut the white parts of the green onions into 2 lengthwise pieces, then slice them into 5cm segments. Finely chop some of the green parts for the marinade (about half a stalk’s worth is sufficient).

Step 2

2. Prepare the Mushrooms: Slice the king oyster mushrooms lengthwise into two, then cut them thinly on a diagonal about 0.5cm thick. For the enoki mushrooms, trim about 1cm from the base and gently separate the clumped parts to make them easier to cook.

Step 3

3. Prepare Marinade Ingredients: Finely mince the Korean chili pepper and the reserved green onion for the marinade. Adding chili pepper provides a nice spicy kick to balance the richness.

Step 4

4. Make the Delicious Marinade: In a bowl, combine 4 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp sugar, 2 Tbsp mirin, 1 Tbsp minced garlic, 1/2 Tbsp sesame oil, 1 tsp sesame seeds, 2 Tbsp chopped green onion, and 1 Tbsp chopped Korean chili pepper. Mix well until thoroughly combined. Using oyster sauce or fish sauce adds a deeper umami flavor to the bulgogi marinade. You can add more sugar or honey if you prefer a sweeter taste.

Step 5

5. Marinate the Beef: In a large bowl, combine the thinly sliced beef, sliced onion, and sliced green onions (not the chopped ones). Add all the prepared marinade and mix gently with your hands, ensuring the beef is evenly coated. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the meat to become more tender.

Step 6

6. Cook the Beef: Heat a pan over medium-high heat without any oil. Add the marinated beef and cook, stirring occasionally. The vegetables and beef will release their moisture, creating a natural broth, so there’s no need to add extra water or stock at this stage.

Step 7

7. Add the Mushrooms and Finish Cooking: Once the beef is partially cooked and the juices have started to form a natural broth, add the prepared king oyster mushrooms and enoki mushrooms to the pan. Stir well and continue to cook over medium-high heat until the mushrooms are tender and everything is well combined.

Step 8

8. Completion and Flavor Infusion: As the mushrooms cook, their moisture will combine with the beef juices to create a delicious bulgogi broth. The subtle aroma of the mushrooms will infuse into the broth, making the dish even more appetizing. Once the broth has reduced slightly to your desired consistency, your flavorful Mushroom Bulgogi is ready!
