  • 4 bundles of fresh perilla leaves
  • 1 medium king oyster mushroom

Seasoning
  • 2 Tbsp soy sauce
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp sesame oil
  • A pinch of minced garlic (adjust to taste)
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, prepare all the ingredients for the dish. Even though it’s 4 bundles of perilla leaves, they shrink considerably when cooked, so it’s good to prepare a generous amount. Wash the fresh perilla leaves thoroughly and pat them dry.

Step 2

Cut the medium king oyster mushroom in half lengthwise, then slice it into thin strips, about 0.5 cm thick. Slicing the mushrooms to a similar length as the perilla leaves will prevent them from feeling out of place once stir-fried.

Step 3

Next, cut the prepared perilla leaves into wide strips, about 1-2 cm wide. Be careful not to cut them too thinly, as they can become mushy during cooking. Try to match the length of the mushroom strips.

Step 4

In a small bowl, combine the soy sauce, red pepper flakes, sesame oil, minced garlic, and toasted sesame seeds. Mix well to create a flavorful seasoning. Having the seasoning ready beforehand makes the stir-frying process much smoother.

Step 5

Heat a pan over medium-high heat. Add the sliced perilla leaves and king oyster mushrooms, then evenly drizzle the prepared seasoning over them.
