- 1 stalk Green Onion
Chef Ryu Soo-young’s Golden Ratio Marinade- Minced Garlic, generously 2 Tbsp
- Soy Sauce 5 Tbsp
- Fish Sauce (Tunafish Extract) 5 Tbsp
- Sugar 5 Tbsp
- Sesame Oil 3 Tbsp
- Vinegar 1 Tbsp
- Pear Juice (Crushed Pear Drink) 238ml
- Black Pepper, freshly ground 20 twists
- Toasted Sesame Seeds 1 Tbsp (ground)
- Minced Garlic, generously 2 Tbsp

Cooking Instructions
Step 1
First, thinly slice the green onion. You’ll be mixing it with the marinade ingredients, so just ensure the pieces aren’t too large. Slicing them now will make it easier to combine everything later.
Step 2
Make incisions in the pork neck to help the marinade penetrate deeply. On one side, hold your knife at an angle and make diagonal cuts. Then, on the opposite side, hold the knife vertically and make cuts. If you make cuts in the same direction on both sides, the meat might separate too much. Making angled cuts in opposite directions ensures the marinade seeps in beautifully without over-cutting the meat.
Step 3
Now, let’s prepare the delicious marinade. In a large bowl that can hold the meat, start by adding the sliced green onions. Next, add all of Chef Ryu Soo-young’s golden ratio marinade ingredients: 2 generous tablespoons of minced garlic, 5 tablespoons of soy sauce, 5 tablespoons of fish sauce, 5 tablespoons of sugar, 3 tablespoons of sesame oil, 1 tablespoon of vinegar, 238ml of pear juice (like crushed pear drink), 20 twists of freshly ground black pepper, and 1 tablespoon of ground toasted sesame seeds. Be generous with the garlic, and grinding the sesame seeds beforehand will enhance their nutty aroma and flavor.
Step 4
Once all the marinade ingredients are in the bowl, stir well with a spatula or spoon until the sugar is completely dissolved. It’s important to mix thoroughly to ensure a smooth, well-emulsified marinade.
Step 5
Add the scored pork to the prepared marinade. Gently mix and massage the marinade into the meat, ensuring every piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight (half a day), to allow the flavors to deeply infuse. The longer it marinates, the more tender and flavorful your pork ribs will be.
Step 6
Now for the crucial cooking part! Preheat a frying pan over high heat, then add about 3 tablespoons of cooking oil. Once the oil is hot, reduce the heat to medium. Before placing the meat, gently shake off any excess marinade from the pork pieces. Lay the meat in the pan, aiming to sear it almost like frying. This method, similar to cooking a steak, helps create a delightful crust while keeping the inside juicy.
Step 7
Listen for that satisfying sizzle as the meat begins to cook. When it’s golden brown on one side, it’s time to flip. Be cautious of hot oil splattering. Continue to cook, turning occasionally, until both sides are beautifully golden brown and cooked through.

Once the pork is mostly cooked, cut it into bite-sized pieces. Finally, turn the heat back up to high. Quickly toss and sear the cut pieces for about 10 seconds, allowing them to get slightly caramelized or ‘charred’ for an extra layer of smoky flavor.
